Ahh so simple and butter hmm I've never thought of that before thank you for your video. my mother in law bought me a tortilla press for my bday and then sent me this video too and I can't wait to try this recipe with my new tortilla press.
Now that's a great mother right there! Happy Birthday, and I hope you enjoy the tortilla recipe and you new tortilla press. So many good uses for a tortilla press!
Hi Pushpa. I've never tried it with wheat dough. I'm guessing it would work though. If you're using just plain whole wheat flour know that your tortillas will most likely be a bit more dense. If you're using a mixture of wheat with other flours it will still press the dough, no problem, but I can't comment on the texture from experience. You may have to the tortillas out a bit more so they aren't so dense. Hope that helps.
I use a similar cast iron tortilla press, but I press and cook them at the same time by doing it on the stove. It's so simple and takes 10 seconds each :) Not sure why I would press them then cook them separately?
Before I toss them on the griddle I just give them a quick roll with a pin or push them out with my hands. The more relaxed the gluten in the dough is, the easier it is to manipulate them.
You can put it where you choose but if it’s placed slightly off center it tends to center perfectly. It will be fine I promise. Just experiment. Either way it won’t ruin the recipe.
I've tried doing it like this, and I seem to be ending up with something more similar to those pizza "crusts" you get with Lunchables, but raw in the center. Any idea what I'm doing wrong? How do I make them thinner so they cook all the way through?
That's awful. I'm sorry. Maybe after you press them either stretch them out with your hands a bit or give them a quick roll with the rolling pin. It seems like yours might be a bit thick from what you're describing. Also, make sure your pan is really hot and you should see them bubble a bit as they cook. I hope that helps.
What she said, the press normally doesn't get it near thin enough. And if your dough is drying out, you can't work well with it. Add lard to your hands, and roll it from the middle to the top, flip it 1/4, roll from the middle out that way you're keeping it circular. Then if it still not paper thin, place it on your hand, and gently pull outwards until you can see your hand under the dough from being so thin.
to get real thin tortillas i press them between a parchemin paper and a plastic ,leave the pressed tortilla stuck on the parchemin paper and flip it over the pan i peal the paper off when the tortilla is cooked and then i cook the other side ….this way i avoid the retraction of the dough that results in thick tortillas .
If your tortillas are cooked you can freeze them in a zipper bag for longer storage. Mine last about a week in a zipper bag in the fridge. I warm them on low power in the microwave between damp paper towels. You can also warm them in the oven for a crispier tortilla or right in a pan on the stove. I hope that helps you Miraiga.
I am a little confused. I watched the video and you SAID 3 tablespoons of cold grated butter, but the Closed Caption says 1 Tablespoon...so which is it???
Hi Paula, the closed caption is rather quick but it says 3 Tablespoons of cold grated butter ( I used salted butter, but your choice) and 1 Tablespoon of bacon fat. I also posted a link to the full recipe in the description as well. Alternatively, you could use 4 Tablespoons of any fat of your choice so if you wanted to use all butter or olive oil, crisco, etc that is completely a personal choice. Sorry for any confusion.
@@thekitchenprescription1821 No the quick scroll by of ingredients at the beginning of the video is wrong, it says 1 tbsp. So for everyone else reading this, everywhere else says 3 tbsp butter. Relax. These are like the same folks that have a panic attack when someone types there rather than their. ;)
It's a personal preference. Sometimes I roll them and sometimes I'm short on time and use the press as a shortcut and finish pressing them out with my hands or a quick roll of the pin. Thank you for leaving a comment on your experience just the same.
If the press is cast iron, you can cook directly on it. Heat up cast iron, place dough on press, press, and the tortilla is flat (not like pancakes). You will get thick tortillas if you only use the cast iron press to press and not press and cook immediately with the cast iron press.
Thank you for the recipe!! I have a question, can I use lard instead of butter and bacon fat?? I have all 3, but wanted to ask you!! Thank you in advance!! Dios te bendiga!! 💖🌹🇩🇴
Sometimes, I don't mind the tortilla thick because it's smaller and holds the protein or veggies better in my opinion. But you can just use your fingertips to stretch it out thinner if you'd like. Or the other alternative is to hand roll your tortilla, but that defeats the purpose of the tortilla press. It's a personal preference really.
There are also larger tortilla presses that you could use that might help :) I don’t really like thick tortilla either. I just ordered a 10 inch press!:)
When you said "balls", I thought to my dirty mind self, she just said "balls" and then you said "I just said balls". I started laughing! I was thinking, yep she's my kind of people.
I tried to make tortillas with my press and a recipe I found online. Didn't work. After watching this video I see my mistakes clearly. Thank you very much!
Mine shrink back too, it's just the nature of dough. Sometimes, I give them a 5-10 minute rest and then try to stretch them again if they're being super stubborn. Don't get discouraged, it's just dough, show it who's boss.
Can't help but notice that your tortillas are larger going into the griddle than they were coming out of the press. I've had trouble with presses not making tortillas thin enough. What gives?
You're correct. I did stretch each one out just a bit with my fingers before I placed it on the griddle. It's a personal preference really. The point of the video was to show others who can't maybe roll so well that a press can be used. I like my tortillas on the thinner side.
The dough isn't relaxed. The gluten bands are the culprit. Mine do that sometimes and I stretch them out with my hands before throwing on the griddle. You can also give them a quick once over with a rolling pin too. Hope that helps.
The Kitchen Prescription thankyou .. ill try that. But how long are we talking about. I trie approx 20 mins. But i didnt follow your recipe specifically. I tried 40% hydration. 50%. Thats 40g water for each 100g flour.
I usually only let mine rest for 10 minutes after I roll them into balls. Hydration, temperature and type of flour used can also play a role. Again, just give it a stretch out with your hands or a rolling pin to your liking.
