    BACOLOD, PHILIPPINES - We are continuing with our food tour in Bacolod, Philippines, with another stunning dish that you have to eat when you’re there - cansi. We’re going to see the full process and then go to eat one of the best meals I’ve ever had in the Philippines!

    Cansi is a dish that includes huge beef bones simmered for hours until all the flavor is released and combined with ginger and onions, green chilies, and a especially a local fruit called batwan fruit (garcinia binucao), which gives the soup its sour taste. It’s really an amazing broth and so addictive as well. When they serve you cansi you can taste all the herbs and acidity which breaks down the richness of the meat. The flavor was incredible.
    In addition to cansi, at Eron’s you’ll find a full spread of local Filipino food which you can choose from. We enjoyed a variety of different dishes including local Bacolod seaweed, smashed eggplant, and some grilled pork belly.
    It was a fantastic meal and something you can’t miss when you visit Bacolod! Highly recommend Eron's Cansi House.

    I'm Thai...I used to stay in Bacolod for a several months. As you know, Thailand has lots of great soup and grill chicken but I have to admit that Inasal and Cansi are something crazy good. I miss those yummy dishes now lol

    Mark, you have taught me SOOO MUCH about Filipino Food. I just lost my Uncle, Antonio, who died last Thursday. A Filipino Radio broadcaster who gave me many years of GREAT food restaurants and spices I was able to share with my U.S. family. Thank You!

    The women who shared the meal with you at the beginning were so warm and friendly,they reminded me of a friend of mine from the Philippines she considered me family and we were really close even though we lived half the world away

      Filipinos love having friends from all over the world; its almost second nature to us to want to have friends who become the family we choose; especially if they are from a different place and culture.
      Even 1% Filipino blood is already considered hella Filipino here.

    I love the lady in black shirt talks so eloquently. I wish she has her own food vlogs too! My father's side is from Iloilo which is relatively an Ilonggo decent. I learned to eat Cansi just a few years ago. Dinuguan Ilonggo is the best!!

    Whyyyyy!! 😭😭😭 The last video is the place where my friends and I ate dinner when we were still in college, but the place where Mark eats now is very close to our school and even walking distanceee.
    Mark Weins, Food Review Show, Gordon Ramsay, and The Food Ranger was one of the reason why I learned how to cook so many different foods. Thanks to you guyssss!!!

      On top of that which makes his trips very interesting is even though the urban city and rural provinces have the same dish, the prep can be different slightly to drastically with the result of a diversity of taste of the same food. I can see why Mark returns to the Philippines over and over.

    Thank you for featuring cansi, one of the underrated dishes in the Philippines. It is my favorite soup because of its sourness yet flavorful. I'm from Cebu but cansi is my favorite soup.

      @@kendricksantosio1238 It's somewhere between sinigang and bulalo. I tried Cansi last year, and it was so good. I'm from Manila, but I became aware of Cansi because of foreign vloggers/foodies traveling to Visayas and Mindanao.

    Mark. I am glad that you went out of your way to feature our food and not just the Manila/Luzon area. Visayas region has soooo much to offer and they do not skimp of herbs and spices on our food. Barely are made with "just boiling". Our Visaya food has so much depth

    Another AMAZING video, Mark! Also, I just gotta say I really LOVE the fact that Mark actually finishes all the food he orders, in a lot of other food videos you see UA-camrs order a ton of food but you only ever actually see them eat a few bites, but with Mark you know that he's gonna actually gonna finish all the food or at very least eat a TON of it. You can really tell just how passionate he is about food and how thankful he is to do what he does.
    So many other youtubers get a bit too big for there boots after reaching a certain level of success or don't look nearly as excited as they used to before getting big, but not Mark. In every single one of his videos you can easily tell he's genuinely thrilled to about all the food he gets to try and all the great places & people he gets to visit. Never lose that passion, Mark and Thank you for sharing all these amazing experiences with us!

    Ugh, that cansi 🥲... After seeing the last episode I am happily reporting for duty again in Bacolod! I love hearty, rich soups with lots of bone flavor, and this seems to kick that into complete overdrive! Mark is on such a roll lately!

      It's the hiligaynon accent which is charming. Each island or area has its own dialect and this dialect is so charming when they speak.

      Bacolod really is a top food destination in the Philippines. Only thing that Bacolod is rarely known for is seafood. They have seafood spots in Bacolod but nothing special to boast of.

      Growing up, not many people owned refrigerators ..housewives go to the market everyday to buy food for the day ,thats why freshness is key to a good dish..oftentimes condiments and sauces are used to enhance thw taste and not to mask or hide the quality of the meat..

      Yeah Bacolod isn’t s tourist spot like how it should be. The original chicken inasal and cansi alone are enough to staple it as a culinary destination.
      Great restaurants, you can spend at least 3 days tasting all inasal restaurants and other restaurants with their own signature dishes.

    I'm from Philippines (Cebu) and I'm so surprised to hear more of Filipino food i've never heard of that isn't too exotic and could've been in some higher class Filipino restaurant menus. It makes me wanna explore more of my country's food and market them making them part of the main Filipino cuisine! As a skilled cook myself, it should't be a big problem for me to recreate those.

      Actually it is common in the household that kind of food ampalaya,tortang talong,small fish torta is cmmon same with kansi in my hometown

    Wow Mark at last you tasted now my birthplace Kansi of Bacolod ! Next you have to taste also our KBL and Super Lapaz Bachoy and Iloilo pancit Molo.It’s different than Kansi.I have a Batwan pickled here in Tokyo that my sister souvenirs last month from Iloilo City. Enjoy eat Mark!

      Kumasta from Toronto ! My first time in the Philippines was all over Manila (even Tondo!) And Tagaytay for bulalo The people are wonderful And it is truly a gem of Asia You now live in another part of Canada that is great Montreal ! Smoked meats Dunn's Famous (Cake is good too!) Underground shopping ...But no jollibee : ( The closest one is 5 1/2 hr drive to Toronto Enjoy Canada ! And i bet we both get a want/need for the Philippines ..I miss it

    Calamansi is the spelling of Limes in the Philippines. I LOVE how Mark always refers to this fruit as Calamansi and NEVER calls it Lime. It is wonderful because it is my FAVORITE fruit here in the U.S. when I am cooking.

    Im a native of this place. Whenever Im home i try to eat Cansi but as much as possible in Sharyn's. We only go to Eron's if Sharyn's is either full or closed. Cansi is how exactly Mark would describe it. I think batwan is the key ingredient that changes the texture of the soup along its distinct sourness.

      @@latibro21 di po parang sour po sya malapit sampalok sa sinigang pero may distinct taste talaga sya. Kahit sa Cebu di sila Gumagamit nang batwan kaya as someone from Bacolod, hahanapin mo talaga ang lasa nang batwan. We also use in KBL (kadyos, baboy, langka) and in our homecooked sinabawan na isda. Batwan is life here haha
