Ghost kitchens don't actually know how to make the food correctly. You may get lucky or may not. It's a completely different recipe that is not related to how they would normally cook their foods so the result is food that ain't perfect. They aren't trained to cook using that recipe as far as I know. Sure any mcdonald's you go to won't give the same qaulity but you know that it will at least be mostly consistent quality wise so you can trust that at a different location it will at least taste near identical all because it's something they always cook and its a recipe they akways cook. Mat Pat did a extensive video on this topic.

It’s a great way for a restaurant to expand their menus and target different audiences. Example, a pizzeria might also sell calzones as a separate concept, all items are made with the same ingredients and you can advertise it to separate audiences.

since a ghost kitchen (technically a virtual restaurant) is just a restaurant operating out of another restaurant, i figured that they would have their own product because the online restaurant pays the physical restaurant to prepare the food and what not, so maybe it’s just the quality of the food each different restaurant serves 🤔
I worked at a terrible pizza place as a server. Once took an order for a table of vegetarians and my boss put pepperonis on it and when I told him he had to make a new pizza he just took the pepperonis off and made me serve it 😭
