I'm a server and what makes me the most upset is when the kitchen cooks something wrong or someone makes a mistake ordering (so something that never even got set down on the customers table) instead of letting the employees eat the food or take it home they just throw it away. Then seeing them just toss out sauces, breads, meats and such that could go back into the walk in at the end of the night. It's infuriating.

The weird baguette thing is called a Ficelle its a thin baguette with things added to the dough. Usually its either olives (it seems that's what you had), cheese or bacon. You eat it as an appetizzer or a snack.

i feel like if you're going for restaurants that are of like latino food, or even european food, you're not gonna luck out with the vegetarian options, as a lot of the food contains meat. also, idk if they do that in latin america, but at least in portugal, it's common to cook black beans with some chorizo, to add the flavor. so those beans were possibly meat "infused". the last one definitely had the beans cooked with the meat, sorta like a stew
Just fyi, as a Mexican, Mexican rice will always have chicken bouillon or chicken broth to make it. So you had some chicken. And probably with the Guatemalan rice as well.
