I think the sauce in takoyaki and okonomiyaki is the same. But the actual takoyaki and okonomiyaki taste different because they’re made with different things :)
You should actually use okonomiyaki sauce(you don't have to, but it's not hard to make). It's just ketchup, honey, worstecher sauce and some soy sauce. You can prolly find a recipe on the net somewhere.
yes! the name "okonomiyaki" literally means "fried/grilled as you like" so you can pretty much add anything to it! cabbage is pretty much the only "required" filling, some popular fillings and toppings are cheese, shrimp, octopus, squid, and other seafood, pickled ginger, carrots, potatoes, there's lots you can add to it! and you can find the sauce in asian shops or you can make it yourself, there's lots of recipes online and it uses stuff you're likely to already have. good luck!!

that's just a different style of okonomiyaki (Hiroshima style). There's two types, one with noodles and one without. That said, I might be wrong...
