Glad that slowly we can reach the 5k subscribers mark. I used to grow with my mom selling ube halaya, we used coconut oil with no flour, cooking it at low heat, and stirring it non-stop until it becomes sticky. Congratulations for those added subscribers. Just keep smiling ❤

ube cake is one of our favorites here. but we haven't tasted such ube cake with cottage cheese for the frosting and filling yet that looks interesting and i know for sure that it would taste good. the sourness and saltiness of the cheese will add a twist with the sweetness of the cake. brilliant idea! again, sell it and absolutely the russians will love it. watching how you prepare simply tells how passionate you are in cooking/baking. cheers! 🇵🇭

also, gotta share, i just saw andrei's pov of this and just got to say, it was really like we were part of the conversation. like girlfriends just bonding. it's really sweet. and love how you guys are all so enthusiastic about the recipes and products, and the coffee! i think that batch that Andrei bought was just roasted? Davao really has the freshest produce. They also do wonderful chocolates and fruits. Wish you guys could experience more of the same and other fruits as well. there is something i wanna add on here regarding the baking, it's mostly Spanish influenced hence the similar tastes and techniques. Like, galletas, the empanadas, the pinoño roll (?), bischoco, and hard butter cookies etc to go with our morning coffees. Although what we lack in say, variety of cheeses, we do substitute it for the more traditional tastes. growing cattle is hard in tropical islands 😂

Hello Olya. Our Filipino ube is different from purple sweet potato. They are different from each other. I have a tip for you. When we cook ube, we put vanilla in the mixture to enhance the flavor of the ube, even if you use it in making a cake with ube. Ube cake requires the sponge cake recipe, and of course, flavored with ube. But you did well on your cake. It looks like a real ube cake. But you may want to add more purple food coloring to the mixture. I think your ube cake tastes so good because you added cheese to the frosting. It now becomes like a cheesecake. Looks so yummy!

And about the banana cheesecake, you may use the New York cheesecake recipe but put mashed ripe bananas in the cheese mixture if you want, like what we do with mango and strawberry cheesecake. Or, you can make another banana cheesecake recipe like what we do here. Make a banana cake. There are lots of recipes and tutorials on UA-cam. It's just a sponge cake recipe with mashed ripe bananas with a pinch of cinnamon and then bake it in a round pan. You can use the recipe you did with the ube cake but replace ube with mashed ripe bananas. After baking it and cooling it down, you may do what you did with the ube cake. Split the cake into three layers and put whipped heavy cream and condensed milk mixture as your frosting on every layer, or you may also add mashed ripe bananas in the frosting itself and then spread on the cake layers and frost the entire cake. It is basically the same process as what you did with your ube cake.

And about the banana cheesecake, you may use the New York cheesecake recipe but put mashed ripe bananas in the cheese mixture if you want, like what we do with mango and strawberry cheesecake. Or, you can make another banana cheesecake recipe like what we do here. Make a banana cake. There are lots of recipes and tutorials on UA-cam. It's just a sponge cake recipe with mashed ripe bananas with a pinch of cinnamon and then bake it in a round pan. You can use the recipe you did with the ube cake but replace ube with mashed ripe bananas. After baking it and cooling it down, you may do what you did with the ube cake. Split the cake into three layers and put whipped heavy cream and condensed milk mixture as your frosting on every layer, or you may also add mashed ripe bananas in the frosting itself and then spread on the cake layers and frost the entire cake. It is basically the same process as what you did with your ube cake.
