    Totally hypnotic and mesmerising watching the Master Chef Wang Kang cook an omelette with such top skills. Just perfect swirling of the Wok movement and zero use of a spatula .... a seamless flip and onto a plate. Perfect golden brown omelette. Beautiful!

    Hey Chef Wang, new to the chanel, but already watched most of it. Could you please in some video/post/somewhere give some guidelines how to mix spices? Like ratio of soy sauce to fish sauce to balsamic vinegar to chinese rice wine etc? Just some general thought, like 5 part of soy sauce to 1 part of fish sauce etc. Will really appreciate it!

      pretty much chinese dishes really dont have a definite quantity of spices.Its all about how do you feel about the taste.you can gradually add spices and have a taste until it reached the flavor you like.

    Sorry, I love chinese cuisine, but chinese omelette is really pathetic next to the fluffy, fresh and beautifully succulent european one.

      Have you tried it? Chinese omelettes go with rice, not potatoes.

      I see where you're coming from. If you've ever tried one, however, I'd think you would agree that they are fundamentally two different dishes with entirely different flavor profiles. Downsides of translating from Chinese to English is that some meaning gets lost in translation, and I think that's the case here with the word "omelette"; this dish simply isn't intended to be one.

      @@ComradeConfucius I have, I lived in Beijing and travelled all over. For example, I enjoy scrambled eggs with tomato (番茄炒鸡蛋). The problem here is that chinese cuisine either stir-fries the crap of something, or braises it, it really isnt well equiped for fine temperature management like the french or italian one for example.
