I am not sure how I found this channel recently, but my gosh I can't get enough of it. It's wholesome, I'm learning a lot, and these videos are preserving a culinary knowledge that could so easily be lost.
An idea... perhaps you could do a piece some day on the knives used by our lovely pasta grannies. Here in the US we obsess about every shape of blades, the steels used, etc. Pasta grannies seem to produce some of the best food in the world with some of the most basic blades. We could learn a lot. (As a former chef and professional knife sharpener I am one of those who dotes on knives. Watching them humbles me.)
The signore's knives, by and large, are the cheap as chips ones you pick up at the weekly markets all over Italy. Their husbands' hunting knives are another matter! 🙂🌺 best wishes, Vicky

I imagine Domenico would have a few funny stories to tell you too. would love to have a plate of that pasta. I love sweet chestnuts so much & that picture you showed of a huge pile of plump ones had me drooling. I ended up making marron glacé or butter & nutmeg fried chestnuts with most of the supply I received this year. heaven. One of my favourite videos so far, though its a hard choice as I enjoy them all.

Dear goatboy,I m a huge pg fan as well . Reading your comment s and seeing that you love chestnuts, I thought you might fancy this castagnaccio recipe! Chestnut flour 300 grams Pine nuts 40 grams Walnuts 40 grams Raisins 70 grams Salt Evo Sift the flour in a capacious bowl, dilute with cold water (you will need about half a liter ) til you get a soft dough without lumps. Add 2 tablespoons of oil ,a pinch of salt and the previously soaked Raisins. Mix it all together and put it in a rectangular cake pan. The dough should be about 2-3 centimetres high. Sprinkle the surface with Pine nuts, crunched Walnuts and some rosemary needle, pour 2 tablespoons of evo on it and bake it the heated oven at 200 degrees . It will take about 30 minutes. The castagnaccio is ready when the surface is crunchy and cracked. This is an old recipe from Florence, my favourite one, hope you enjoy it as well!! By the way, are you from Ireland? I noticed how Domenico just watched Anna make pasta with appreciation in his eyes. I'm suppose people in his generation are able to wait without being bored and watch others with curiousity, which is so different from our phone-obsessed generation. My mom, who's in her 70s, is also like that. I wish we could be like them, able to observe and take interest in our surroundings without too much fiddling on our phones.
In my hometown in the north of Spain we have an iron kitchen that works with wood and we cook the chestnuts over it, how much I miss eating chestnuts in the autumn and winter being warmed by the iron kitchen :(
Love love love chestnuts and anything and everything made with chestnuts. My grandmother had a rolling pin like that to roll out her dough and to make "Mante" .... the same they use in the Turkish kitchen. Cute couple.
Yeah, in the Liguria region were I was born is a very typical food, they have a type of sweet pizza made out of chestnuts called Castagniaccio and also an incredible cake with cream and chestnuts.

Chestnuts are an important food for the Apennine regions. In Liguria they make flour with it and there are several recipes based on chestnuts. Again, something in the US they would never associate with Italian food, and instead it is very important to some regional recipes.

We do have something similar to this recipe in Appalachia as we have many nut producing trees in many regions, chestnuts, walnuts, hickory nuts, etc... so using the nuts in recipes is very inexpensive as you need only gather them & of course do the work of removing hulls/shells, & the chestnuts would be prepared with dumplins' in a chicken stock,( stock made from chicken bones/skin, carrots, celery, onions, garlic, etc...) it is good & is deemed as a peasant meal but many folks like it, but ours is rarely served with cheese, cost reason originally, God Bless everyone , btw Ms. Vicky this is a very localized recipe in several regions, many folks prefer to eat chestnuts roasted on a fire like the Christmas Carol

I didn’t know this kind of tortelli, and I’m pretty sure I would not like them so much, because of the sweetness of the filling, cinnamon, and alchermes (which I really love into zuppa inglese that seem to anciently come from Ferrara), but I find it very interesting at the same time. Chestnut and its flour had a vital role in subsistence of mountain places people during hard winters, especially at 2nd world war time. Talking about Marradi, I would suggest the picturesque medieval festival that takes place there on summer: it’s worth a shot trip. Have a nice weekend.

What an entertaining couple! I wonder if the curious addition of red dye started out to make the neighbours think a rationed household could afford to eat ham often, rather than "common" protein plucked free from the ground under chestnut trees...
Chestnuts are so delicious, but they are a pain to work with, like artichokes. But like artichokes, the finished dish is totally worth the effort, as nothing else tastes like them. I guess you either love them or hate them - or just don’t find them worth the hassle at a minimum. I love them.
