We're lucky in the USA because turkey goes dramatically on sale during the week or two before Thanksgiving (fourth Thursday of November). A turkey will stay roaring hot after half an hour. So it does need longer time to rest an allow the juices to redistribute so they don't leak out when slicing

Thanks for sharing this wonderful recipe. With everything you put in, & out of that Turkey, plus that gravy, it must have been so tasty. P.S. The hardest part for me is picking a perfect wine, that is not going to over take the rest of the flavors.
Oh, I LOVE that! My other favourite is "c'est le petit Jesus en culotte de velours". They just SAY IT so perfectly for something amazing :) As for wine, I drink white only, so can't help with suggestions for red, but I always savour either a New Zealand Sauvignon Blanc with Christmas turkey dinner, especially Villa Maria, or a young grand vin from the Languedoc (biased, I'm afraid, because I love the area and its delicious wines). I really don't know much about wine, but I know what I know and enjoy if that is at all helpful and these are relatively budget friendly too, considering its a very special celebration :)
I'm having problems cooking my turkey. 10 lb and at 350 oven and it's been 3 hrs and half thermometer still not at 165. So I put it back in for 15 minutes. Let's see.
QUESTION: If all this is done day before Xmas, turkey must be cold too and therefore not as moist. Or an I missing what parts are done before the day and which on the day?
We never have turkey. Too big, too expensive and usually a disappointment. The only turkey which ever came out well was free-range and cost £60 ten years ago.
That is wholly insufficient salt and peper seasoning. That small amount won't have any flavor effect. You need a butter, salt, pepper and herb mixture under and on top of the skin. Bake at 325 until internal temp is 160. Let rest for a minimum of one hour.

I never understand the resting of the turkey, he mentions an hour and a half. Surely at that point it will be cold?
It doesn’t go cold if it’s a big turkey, say 5kg
You are serving it with hot gravy
Put some foil and a tea towel over it. A bird that big won't be cold.
If you dont rest the meat any meat.... the juices all come out and you end up with a very dry turkey or meat. I know from experiance......
