Sold! I've been making steel cut oats for years with a microwave method I read a long time ago. I tried your overnight soak trick and using the stove. The big difference is the next day it's not gluey. Amazing! This batch as is is easily 4 days of breakfast for me. I store it in the fridge in a Mason jar. It reheats in the microwave without getting gluey. Thanks!

Great post, thank you. I have some steel cut oats still in the cupboard. I’m currently using traditional rolled oats. The continuous references to creamy oats mystifies me. Oats are not creamy by themselves, even if you add yogurt. (Yogurt or cream is creamy!) . Ready Brek is creamy. Having said that, oats are one of the most healthy stable in the world, as long as you soak them!

3:15 A warning about using milk! I have ruined the two pots of steel-cut oats that I tried to make with milk on the stove because I failed to get the milk to boil without burning it. In my first attempt, I used a quart of skim milk with the stove set to the highest setting, "HI". I could smell burning well before I saw any sign of boiling. In my second attempt, I set the stove to the middle setting, "MED". After about 20 minutes, I could smell a faint burning, and after 30 minutes, it was only up to about a "half-boil". I then added oats and, after 30 minutes on MED, the oats were still soupy, not really cooked, but they tasted too burnt anyway. I have been watching a lot of videos and reading so many recipes about cooking steel-cut oats, but so far no luck on getting them cooked with milk on the stove without burning them.
Have you tried a 50/50 blend of water and whole milk, and cooking the oats on low? When I worked in a hotel kitchen, we never boiled the oats, but they did cook on low for a long time, and they were stirred periodically. Or cooking the oats in water normally, but adding milk towards the end of cooking, about 5 minutes before they're done, and keep stirring.

I have, as a matter of fact, kept trying, though, and I had some great success, albeit hard-won: Attempt 4: 1. Based on some advice I got from an Indian UA-cam video, I pre-soaked my pan in cold water for 15 minutes, drained it, and then put in roughly 20 mL of water in the pan. 2. Based on some advice I got from Reddit, I put the quart of skim milk and the cup of steel cut oats together cold in the pan, and I turned the burner up to the mark halfway between "LO" and "MED". 3. I stirred constantly with a large wooden spoon for 2½ hours. 4. VICTORY. I can say without qualification that these were the greatest oats I had ever eaten. At no point was any part of the dish burned, and it was so creamy and delicious! Retrospect: I suspect that stirring while heating was important to prevent the milk from burning. Looking forward: Standing and stirring for 2½ hours was a bit tiresome, so I probably won't be making oats like this again, but I am glad that it is finally done, and after breakfast, I still had a couple of servings left in the refrigerator.

houdehoule, it's best to add the milk after they've been cooked. You can cook them until the consistency is thicker, then add milk to thin and smooth it out.
Soak in water and add milk to cook. Then top with milk and honey in the bowl Omg. Gonna soak some now for breakfast. My granny came from Shetland and she ate it with salt and white pepper, but I have always eaten mine sweet.

Immediately turn off the burner and cover the pot with a lid. The next morning add a little more water or milk and cook for about 3 minutes. If you use an electric stove, you might need to take the pot off the burner, because it might boil over, since the element stays mad hot for quite a while.
How to make the perfect caramel topping? I keep trying to make flan and I follow the instructions on the box but my caramel just turns to a sugar disc!

I'm confused as hell. I have left steel cut oats overnight, and over 2 days to soak but they still took almost an hour to cook!!! 😑 I just gave up on them.
Jento actually it won't. If you presoak your steel cut oats most fo the water remains in the cut kernels. Cooking them after presoaking just ensures that the kernel is soft enough to eat. I do the same as Thomas does and cook a huge batch on the weekend and just use it throughout the week and I haven't had any problems with it getting any thicker
Also steel cut oats are not as thin as rolled or quick oats, they don't soak up water as easily thus the need for the presoaking step or longer cooking time
@@marcelosilveira7079 yup! a long as you eat them daily. If you're iffy about them not lasting that long you can always freeze whatever extra you make or just cook less for how many days you wanna eat the oats
Wow, way too complicated. 3 cups water to 1 cup steel cut oats and a couple pinches salt in a cast enamel pot. Bring to a rolling boil and boil for one minute. Turn off flame, cover, and let sit overnight. By morning, all water will be absorbed. Scoop out what you want, throw it in the microwave for a minute to heat through, and dress it how you like. Easy peasy lemon squeezy.

Kathleen Craig, one reason is that the soaking helps to leach out some of the starch. That helps reduce the tendency to turn gluey.

You should never discard the soak water because it contains all of the water soluble micronutrients. Always cook the oats in the soak water.
The soak water has starches and offal the process removes. Not good reuse.

i dont think steel cut oats are toasted/roasted....they should be just the raw oat groat cut.

Well for one cup of steel cut oats he used three cups. So if you're cooking four cups multiply that by three. 12 cups of water.
