They do, but newer trucks are made quiet to comply with emissions and noise laws. I think most, if not all of the euro trucks make use of speed retarders or auxiliary brakes that slow the driveline instead of the engine like the jake does.

Compression brakes, an exhaust brake wouldn't have the slowing power needed.
