Thank you for this tutorial! Going to make my great grandmother’s dolma recipe (Urmi style 😊) for the first time & wasn’t sure if I needed to cook the lamb before putting it in the rice mixture. This cleared it up! I’m much less intimidated after watching this. (I’ve been avoiding this recipe for a couple of years because I’ve been too nervous to make it and didn’t want to offend the ancestors.) Basimta! (I hope that’s correct!)
I remember going to a Turkish restaurant when I moved to San Francisco and I ordered kabobs and dolma. I grabbed the dolma and it was cold!! Took a bite and it had no meat!! I was like this isn't dolma!! The kabobs were awesome, the folks was just ok. I like mine hot with meat, the way I grew up eating them. That was the first time I had dolma outside my grandmas house or a restaurant owned by one of my grandmas friends lol

The round short rice taste way better than long rice in this dish. I put very much garlic in it, and also seven spices, red pepper powder, lemon juice or citric acid and dry mint. I over spiced the filling and it's turn out very delicious.

Never ate dolma with chili powder ... I made the dolma today using baharat and chilli powder, and the chili powder distorted the dolma taste for me.... maybe because I never had it with it. But looking forward to trying your other recipes!! :)

If you guys want your leaves not to pop then add less water mixture to it , there was way to much water that she used , but overall it looked delicious
I do remember my mom in the bottom with chicken legs and sometimes with stalk chard , because she use the vinyl leaves or the swiss chard . Anyway thank you . 👍
very nice I love it but I have a question is it ok to put the grape leaves on top or have I been doing it all wrong all along? so you put the steak on bottom and then the grape leaves or it doesn't matter which order? cuz maybe that's why grape leaves sometime don't cook properly. if I have been doing it wrong uh oh lol.
+maryam mure Cooking the vine leaves in a bottom layer after the meat is more desirable because the juices are all at the bottom and the leaves cook better. But there’s no rule about it. Try it this way and see how you like it 😊
hello, at the end when you put everything together I cooked it for 1 hours on low heat but the water has not come down at all. its filled with water all the way after cooking for 1 hour. any suggestion? thanks
I've watched at least 20 videos on dolma and every single one seems to be completely different 😩 this one looks the least complicated, the most appetising, and closest to the dolma I'm trying to replicate for my kurdish husband. All I'd probably add is dill and sumac because I think that's something his family use in their version..

Assyria was in existence well before Iraq was created. Iraqi dolmas come in different varieties, so would you call the Greek, Armenian and Turkish dolmas as Iraqi dolma? in future just increase the heat for a little while and let it boil almost... but keep watch in case it burns the bottom...

Are you suppose to soak the rice over night or at all before putting it in the mix ?
Only to be soaked at least 20-30 minutes before :)
