Watching this video I realized the “cast on” I learned to do at a yarn shop as a child over 50 years ago was the long tail cast on! I was taught exactly the same way you do it!
That will just depend on the stitch pattern. If it’s garter you knit every row but if Stockinette stitch you would purl every other row. Hope that helps!

You didn’t say whether you are knitting each row
In this demo I was knitting each row but the technique of how you work back and forth is the same even if you were purling back. I hope that helps!
but after your cast on - are you not not ON THE WRONG SIDE
It depends on the particular pattern - sometimes the first row after cast on is a RS row and sometimes it’s a WS row. Hope that helps! 😊
