I make bread in my bread maker all the time. Your wet ingredients go first plus salt and sweetener then your “flours” then your yeast. If yeast touches salt, it deactivates! And you NEVER OPEN THE LID during cooking, unless its to ad a bet of additional flour if its too thin! If it sticks to the side, you have too much liquid… happy bread making.
I make this, but changed the vital wheat gluten to 3/4 cup and added 1/2 cup of almond flour. I also added 1 TBSP of baking powder. It is a better texture and the best keto bread I have ever had. I also let my yeast activate for 10 minutes and added the melted butter to the liquids.
By changing the vital wheat gluten amount and adding the almond flour, did it alleviate the gumminess or chewiness of the bread? Thank you for sharing.

I agree with adding the yeast first. Never use a metal utensil to mix in a bread machine pan, that will definitely scratch the pan, use wood, silicone or just your finger.
I'm not a stickler about metal on nonstick but jeez man, not scraping in a video! What did that knife even do for mixing that up? Also I just wanted to reach in and scrape the sides. 😂

I have now subtitute sorghum sourdough for yeast. I also start on the dough setting, and allow the dough to ferment overnight and bake in the morning. Because I use sourdough, I don't need a sweetner.
Add all the liquid and turn on machine to stir. Then turn off the machine. All the liquid needs to be at room temp. The size of the eggs and the temp can make or break the amount of final rise. Any cheap machine on basic or white setting will work . Just get a cheap used machine.
I had made this a while back and liked it, so I’m doing low carb again and made it today in my Zojirushi machine. It’s a wonder how good it came out. I got the original recipe from Diedra.

I made this bread when I was keto. I liked it very much. I’m carnivore right now to eliminate symptoms of autoimmune illness that’s causing me constant pain and constant fatigue. But I’ll transition to keto again. I’m glad I saw you because you reminded me of this great bread. I’m having trouble liking the egg breads but I make them. I’m not sure how to toast them. But they are ok. I’m using chicken flour too right now with pork rinds . Egg white , etc for delicious crisp chaffles. Thanks for the reminder on the bread.

@dizzichef9502. Have you tried Keto Upgrade yeasted bread recipe? It's not 100 percent carnivore, it has psyllium husk , but it's close to it, and the best egg based bread in my opinion. I made many egg loaves and just had trouble with the dryness.

Add ingred you already have> eggs, cheese, mushroom, tomato, beans, bacon, ham, lemon, fish, zucchini, parsley, dill, bell peppers, hot peppers, salmon, frozen meat balls, olives, slaw, tuna, left over chicken & Swiss & spinach, sauerkraut, etc. Can be used for breakfast, lunch or dinner. Roast beef from slow cooker. I never use deli meats, they'll kill you. Highly salted, nitrates, cheap parts. I prepare meats overnight in a slow cooker, shred, divide, freeze. Make the bread, slice, freeze. If you love sandwiches, hate to cook, are older, have slowed down with medical problems, have hungry kids, unexpected guests, or are single < then these sandwiches are a life saver. You can also make keto friendly treats in the Sandwich Maker.

I use the gluten free setting because I don't add the vital wheat gluten. I just skip my second mixing by pulling out the "mixer blade" before it cooks because I heard non-gluten breads can't be mixed twice in the machine and my setting does it twice.

Please don't interpret this as Keto policing but oat flour has 22 carbs/19 net in 1/4 cup and oat fiber has 26 carbs/0 net in a 1/4 cup. I would expect a bg impact. Stay healthy.
Made this bread the other day came out looking fabulous, however very chewy and had a weird after taste, would that be the phsyllium husk powder or the vital wheat gluten that caused this and can you substitute for different ingredients please
There’s gluten in the recipe. I just use the basic bread setting and mine does awesome! My machine raises twice on that setting and the gluten helps with that second rise. Gluten-free bread only raises once.
When its done kneading, can I remove it and cook it in a dutch oven or even in a loaf pan in an oven ? I need a different shape than the large square my bread machine is. Worse yet, its own weight curtails its rise.
This is the closest to real bread I’ve found! Love it with both golden/dark flax seed meal and also made rye, pumpernickel and pumpernickel rye as well as rolls with it! ❤️❤️❤️❤️

I know this is 2 years late, but this video just popped up in my feed. I first found this recipe on Low Carb Cook. He does a great tutorial for making it several different ways. I have found that it works for me using the no knead overnight method (see regular recipes by Artisan Bread by Steve) without eggs, increase water to 1 1/2 cups, no butter at all, or use olive oil, sweetener or no sweetener, no honey or some honey. It's that versatile! I personally like really dense chewy bread. I've also used the original recipe, mixing and kneading for 8 min. In my KitchenAid with the dough hook. Cutting back the vital wheat gluten and subbing other ingredients made the loaf more dry, different texture. I am really enjoying this bread and next I'm going to use the dough for cinnamon rolls.😊

@@Gkiss-sw2oz Einkorn Wheat. It has glutton but its glutton is nothing like the glutton of today's wheat. Most people with glutton intolerance can handle the glutton of Einkorn. Tastes good and the macros are similar to almond flour, I think. Use your glutton free setting in a bread maker as it will only rise once.
This bread is OK, but the texture is almost... soft plastic, for want of a better description. Very difficult to cut even with my super-sharp bread knife. Unlike regular bread, this bread doesn't taste best right out of the oven. Cool it off if you want to get some flavor out of it. Might make a flattish French-shaped loaf next time to make easier and experiment with some of the dry ingredients. You can also avoid hassle by just putting all the liquid ingredients on the bottom (+ salt and butter), the mixed dry on top, then the yeast last, turns out just fine. Mine rose well, but it will sink somewhere or other.
When I see the veggies I think of the carbs in the veggies. I’m carnivore so carbs has become my turn off but when I transition to keto I’ll be eating green veggies.
I don't think so, at least not cup for cup. I know someone who exchanged 1/2 c of bread flour for almond flour in a large loaf recipe but when they substituted the entire amount, the dough did not come together at all. It was a soupy mess.

Holy moly flaxseed, that's a tremendous amount of flaxseed I use the recommended amount, 1tsp, and it smells like fish. I know that bread, with that huge amount of flaxseed doesn't taste good.

Just to let you know... the soup is NOT keto. The vegetable mix contains corn. I always buy individual vegetables. That way I can choose keto only vegetables.

No! Add the yeast at the end after the dry. Mix all the liquid first to the machine make sure the temp is room or in the 80F range.

Turmeric is wonderful, caution on berky filters! My berky failed a test for dirty water and matched the city water . So disappointing 😞

Xantan gum prevents baked bread from rising, my experience it makes bread dense and heavy.

Take the temperature and if it is 190-200 it is done.

Yes, there is a difference between oat flour and oat fiber.
Actually, oats are very high in carbs, so it would no longer be "keto" using oat flour (which is just ground oats).

The thing I don't like about this bread recipe which I tried last year is the texture it's so rubbery when you chew but looks beautiful.

I think the recipe needs tweaking, maybe a little more salt & a little more sweetener...the taste had a bitter edge to it, but the texture was great!

Replace with chia seeds, or half flaxseed and half chia seeds.
