    Thank you very much for your videos. I am in Palawan experimenting with my first batch.
    It's taking me so far two hours to remove the nips and I think I still have two hours of work to go. Ha ha ha ha
    This truly is an enjoyable, new hobby for me.
    I planted several cacao trees behind my house last year, and hope to be seeing my own Kayo fruits in the near future.

    I took a look at the winnowing machine in cholatealchemy, and the shipping costs more than the price of the machine. I got turned off. But the melanger I bought from an Indian website was pretty OK when it came to shipping. I guess I'll just do the winnowing manually.

    Hi I have roast my cocoa beans and also I heard pop sound. But during grinding it's looking like dark purple not brown. Is it anything wrong with process? Do you think I can still use it to make my chocolate?

      Thanks for asking. the popping sound when you first heard it, you already took it out of the roaster? It may have been too early. The popping sound is an indication that the roasting process is on the way as the the skin of the bean is popping and creating thin layer of separation from the bean
      Typically it should be on the brown side vs purple. You can try roasting again but will have to have a more closer look at it.
      Once you learn to the quirks of your roaster and the beans you typically use, you will now be able to set some proper protocol for your roasting process.

    Hi Ma’am, I have a question. Do we need to cool down the temperature of cacao beans after roasting before cracking it or the cooling stage is optional?

      Hi Rizalino, we have not checked the pricing again recently so it has probably changed since we last checked. Maybe somewhere near 100k+ for the big one.

      There is no specific brand for local winnower that we have tried na cacao specific that we are confident to recommend. Most local winnower in the local market are used for multiple type of agricultural products. A lot try and just modify for cacao use.
      When we find a locally made one and are confident in its efficiency we will make a video about it.
