Have you tried grinding cacao beans using a stone refiner/grinder? Let us know your experience! If you need a chocolate refiner, you are in luck because we found a supplier here in the Philippines. Check out Godel Chocolates - links in the description box.
Thank you very helpful. I will buy one.
I run out of tablea and I found online cacao nibs (from peru) and I used the coffee grinder of nutri bullet. The result is close enough to the tablea I used to bring home from pinas during vacations. I wish I can find also online some cocoa nibs from pinas and the grinder. Watching from FL.
@@thelmasathiraju4969 Thank you for watching our videos. Hello from Davao haha. We truly appreciate your support
Hello just purchased one melanger. Do you have recipes for milk chocolate using this equipment ? Can I add milk using the melanger? Will adding the milk not destroy the melanger? Thanks for your reply.
@@ms.maniba4628 use po milk powder. Slowly add other ingredients like sugar and milk powder as it grinds it down. Di naman masisira ang melanger.
I’ve only watched a little bit so far - fantastic! I have subscribed.
I have watched and liked most of your videos. I am starting a Cacoa and vanilla farm in American Samoa. Your video's were very helpful.
Thank you sir. Good luck on your cacao journey 🥰
Doing my forth batch in my premier now. Works pretty good. Great peanut butter too.
Yes great starting point 🍫 keep it up
@cacaocultureph Piura Blanco chocolate mousse from scratch.
Roast beans at 275° for 10 minutes then at 217° F for 40 minutes. Shell, winnow, chop in vitamixer then put into melanger with melted cacoa butter and process with sugar at ratio of 60, 10, 30 percent respectively for 24 hours (20 micron grain size). Mousse is melted chocolate, egg yolks, sugar, beaten egg whites folded in, then fold in whipped cream.
Why make chocolate from scratch?
Look up Piura Blanco. It's around $15.00 for 100 grams. I used 200 grams in this batch. The 1 kg of cacoa beans cost $15 and I ended up with 1400 grams of finished chocolate. But it's more than that. The quality of the chocolate is better. There are three types of cacoa beans (Criollo, Forastero and Trinitario, and multiple hybrids) the Criollo is the rarest type and that is what this is. It tastes more like a milk chocolate. Then there is the process. By doing it yourself you know that the beans are sorted and the rocks and sticks have been removed. The roasting winnowing process is under your control. And you can conch the beans to a finer level than what most of the big chocolate makers do. I go to 20um. The standard in the US is 30um and it is noticeable. The biggest thing you accomplish though is helping others and improving the world. These beans are grown in areas that were formerly producing drugs. By purchasing beans through companies like Meridian Cacoa the farmers get paid a decent amount. Big chocolate companies only pay $2 a kg for cocoa beans based on a world wide pricing cartel.
Love this mam sheila sir kenneth.. Godbless po....
Hi Dulche, thank you for watching our video and commenting on our channel. Hope you guys are doing well! Happy New Year!
Keep on grinding! Good luck on you cacao journey🍫
Well skilled....👏 Can you please brief out about the additives & preservatives used in chocolates in upcoming videos ....!!
HI useful information and nice editing, however I would suggest you do something for the audio quality, the music is mixed too loud and the original audio track of you speaking is very unclear (probably bad microphone), it is very challenging to actually make out what you are saying which is a pity since I believe you have good info to share.
Thank you for the feedback. We will try to improve the videos in the future
Sana mag vedio din kayo kung pano gumawa ng tablea i want to learn
Hello, I loved the video. It’s best I’ve seen with all the details. I had questions about the process. 1. In India we’ve wet grinder. Can I use that? 2. If we stop the grinding for night then how to start in morning again. Won’t the chocolate freeze?
Hi Tvisha, thanks for watching the video and supporting the channel. Chocolate melangers especially the more compact ones are based on India’s spice / wet grinders. I am not sure how different they would be now after they modified it to work with chocolate. I would imagine it would be more heavy duty to sustain longer grinding hours.
For your 2nd question, grinding process is okay to work in a normal room temperature, if left overnight it will not freeze or harden. You can just resume grinding in the morning.
Hope this helps you in some way. Good luck on your chocolate journey 🍫 sending much love from the Philippines 🇵🇭😊
@@cacaocultureph Thank you. I think, this will be helpful.
I like to buy this item for peanut butter
Interested
Hi. I have seen melanger na nasa gilid ang motor. What melanger can you recommend?
Best one is the one that is available to you😊
Use case per maker is subjective and will be based on preference.
Hello mam.. Meron ba ang Godel's na available na plastic ung kinakabitan ng stone.. Nag crack kc ung sa amin. Thank u sa reply
You can check and ask them maam. We are not sure 🤔 about their services
OK mam thankz
Pag walang sugar, okay lang marerefine din ba na parang liquid na?
Yes the ability of cacao to liquify is from the cocoa butter or the natural oil that is has. Similar to grinding peanut butter.
Sugar is just an ingredient that you can add.
Can you grind the nibs to powder using a typical high-powered blender?
It will not be as fine. Also cacao is not similar to coffee that can just be easily ground into powder. Higher fat content in cacao which makes it similar to peanut creating a paste
Saan kaya nakaka bili ng ganyan na wet grinder
My available pa po bang stone grinder machine? Pede po mahingi link sa lazada
You can search Godel chocolate they may have sa lazada 😊
Awesome content po!!! Suggestion lang po i think it would help to do some audio leveling to improve the watching experience. Meron kasing parts na malakas and mahina.
Thanks Sai for watching our videos and supporting the channel 😊 Salamat din po sa suggestion on audio😊 will try our best to improve the quality.
Where i can buy tha melanguer?
Online lang po. You can check lazada or local Facebook groups
What is the process to make cocoa powder?
Hinde po ba pwede sa refrigerator i hardened ang tablea kailangan talaga sa chiller lang? Thanx po..
Pwede naman po. If this is for selling dapat make sure lang na walang ibang food na laman dahil baka mag contaminate sa tablea na maapektohan ang taste or smell
Hi po, I noticed that you did not include cacao butter as stone grinding unlike a karaniwang nakikita ko sa youtube. Okay lang po ba na pure cocoa liquor and sugar na lang ang ilalagay and walang cocoa butter?
Hi Eileen😊 thank you for watching our videos and supporting the channel. Depends po sa recipe na ginagawa nyo and depends din po visually sa nakikita nyo if need po ng cocoa butter.
Dark chocolate recipe for example 75% means that there will be 25% na other ingredients kadalasan po ay sugar. The current cocoa butter na kasama sa cocoa liquor is usually enough already na no need na dagdagan. If mas higher na ang % of other ingredients then mapapansin nyo na need na mag dagdag kasi nagiging grainy or di na smooth ang mixture.
Hopefully this information helped you in someway. Good luck with your chocolate journey
The melanguer is literally on for 24 hours? Or are there moments when you shut off like in the middle of the night?
We typically shut off late at night, then turn them back on in the morning. While I think the melanguers can endure long hours, I am pro-safety and would like to prevent any instances or chances of machine breakdown or fire especially during times when people are not present in the area (like at night).
Wala po stock ngayon ang godel for refiner, any other shop na marerecommend niyo maam? Thank you!
Check nyo po cacao fb groups sa Philippines. May mga nag sell din po doon
Hi may tanong ako kahit ba purong e grind mo yung cacao nibs mag tuturn yun into liquid pag na grirgind into small particles. Or may hinahalo pala mag liquid?
Cacao beans, or cacao nibs still has oil in it called cocoa butter. Once grinder it will turn to liquid/ fluid form.
If your cacao beans low cocoa butter content it may come out a bit less fluid grounds of nibs
Is corn mill grinder the equipment i need if my goal is to make chocolate tableas? Can you recommend supplier? Thank you for all your. Ideos. Am learning a lot.
Hi maam Gina, we do not have a preference in terms of supplier or brand. Corn mill grinders are very common and you can check your agri machine/supply shops in your area. You can also check peanut / wet grinder type that is already stainless so it will be more hygienic 😊
mam, ilang machine Po Ang kailangan para magrind Ang cacao? thank you please reply.
Typically isang machine lang po pero may ibang chocolate or tablea maker use two different grinders para mas pino
Weve been into cacao making for so long and I am planning to innovate like putting some additional flavor on it but of course maintain as well the old school tablea which mold by hands the circle one.. My question is do we have here in the Phil Manual or electric which Can create spiral in shape?
Hi Joanne, thank you for your comment and supporting the channel. I am not sure po what you meant with your question. Did you mean do we have in the Philippines manual or electric molding? or mixing ng flavor? Hope you can clarify so we can suggest po.
@@cacaocultureph yes po about po sa manual machine. Yungbpong lalabas na sa makina bilog na po. Instead po gagamit pa ng kamay para mabilog po. It takes time and mas nakakapagod po iyon. Salamat po
@@joanneparadela5469 we use molds na po instead of molding by hand. May mga silicone molds and may polycarbonate molds available in the market.
Up to 72hrs of grinding magkano po yung nakokonsume ng kuryente at ilang kilos ang kailangan sa isang batch para masulit yung power consumption
We have not really figured that out. Para sa ibang machines iba iba ang electrical requirements so best to check the equipment and maybe ask an electrician for more accurate information 😊
Goal of Grinding is the achieve a certain level of smoothness. For tablea pwede po less hours sa melanger. Use you finger or taste it to feel the roughness or smoothness. If ok na po sa inyo then stop nyo na po.
Each maker has their own style or process😊
@@cacaocultureph thanx po and God bless
hi, great site! where can i get the molds for the tablea. been looking for a plain round or oval mold without ridges. any website or name of store would be of great help.
Hi Manolet, thanks for watching and supporting the channel! We found ours online pero imported from China through alibaba. We bought it 5 years ago so we forgot which link or store we got it from.
Everything can be found online nowadays. Marami lang po talaga din klasing molds (shape, quality, material) Hope you find the ones you're looking for. Good Luck on your chocolate journey!
Uhm I’m using this tupper ware na i push pull mo para ma cut tas As of now it have little oil pero hindi sha fluid pa
Hi Krislaurence, thank you for watching our video and commenting on our channel. I am not sure if that comment was a question but you can let us know what you want to know about grinding cacao.
Mam paano po mawala ang pait pagnagrind ng cacao
Hi sir baka nasa pag roast po natin ng beans. Over roasting mag contribute din sa pag pait.
This is really good. THANK YOU.
How can I get a Cacao powder instead of
That’s a different Machine. You need to use an oil extractor to extract the cocoa butter. The left over becomes the cocoa powder
Good morning Po, magkano Po Yung machine gumagawa Po kami nang tablea.

How many years a melanger machine will last if it runs 24 to 72 hours or let say 24/7?
Hi Ryan, thank you for watching our videos and commenting on the channel. As for your question I am not quite sure how many years would the life span of the machine would be because there are a lot of variables. These types of melangers are not necessarily designed for full production in a factory type setting because there are larger types available.
Machines do break down eventually but you just need to take care and listen to the tips we gave in the video.
Good luck on your chocolate journey sir!
hello pwdy po ba magtanong if how much is this melanguer cacao refiner machine
You can check po Godel Chocolate on Lazada - may mga ongoing sale and discounts sila on Melanguers po

I have a doubt , I grind the cocoa and it was in a power and it smells so different and werid?
Why?
Thanks for watching and supporting the channel 😊 We are sorry that we do not understand your current situation and we are not sure why it would smell weird.
@@cacaocultureph okay🙂 we made the chocolates and it came out soo..
Good and so tasty and it was the first try thnkuu!!💜🍫😋
May I know please what size is the usual tablea tablet and suggestions for the price.
How many tablets will be made in 1 kilo of Cacao beans.
Please let me know also the best name of machine to use being first timer to make tablea.
Thanks and God bless you more abundantly
Hi Ursala, thanks for asking. There is no standard. Each tablea maker use different molds depending on their preference. Given that the weight and number of tablea in 1kg will be different.
For ours we use a mold that produces 12-13g tablea disc. 1kg is approx 84 discs
We don’t endorse any brand at the moment but using a melanger to start is ok. But once you get more quantity size of the grinder will matter.
Hi po, pwede po malaman yung machine supplier niyo sa abroad kasi nka based po ako sa Singapore and wish to buy one. Thank you po.
Hi Lucy you can search lang po if may local suppliers sa SG. Alam ko po may mga chocolate makers din po dyan. If wala sa US po next na alm namin. Online lang din po kami nag search

Hi thank you for watching our videos and supporting our channel. Sana po makaabot dun hahaha medyo madugo po talaga yung FDA regulations and requirements that the best advice we can give is go to the FDA in your local area kasi sila ang nagiinspect.
