I want a smoker so bad. I just can’t decide on the type. Thinking charcoal or pellet. I’m nervous about maintaining the temperature manually. But that charcoal taste 😋😋

If you go charcoal buy quebracho blanco charcoal, it’s fast lighting and if you use bigger chunks, say 4 to six inches, it burns a long time, I just smoked two pork shoulders over 8 hours and added a couple extra large chunks every few hours. I use applwood chips to generate the initial smoke.

Short, concise, informational. Thank you for providing these in a well organized way for begginers. I am a begginer and recently bought an electric smoker. Unfortunately I am very disappointed in the taste and appearance of the results. Just didnt achieve the smoke ring and taste i anticipated. Im onto the next step debating what to get next. A vertical or an offset smoker? A pellet or a charcoal/wood smoker. Any recommendations that are budget friendly? Tia!
