Flaky Keto PUFF PASTRY!!!

    So many possibilities with this keto puff pastry, first thing I made was keto strawberry cream cheese toaster strudels. Hard to keep the filling in when baking but so very tasty with a sweet toaster strudel icing on top. Best advice is to make sure they are sealed very well, and cut 3 slits in the top to not have a complete blow out from the side. Can also seal, egg wash, cut the slits then freeze for a few hours before baking which helps.
    IMPORTANT EDITS!
    I did another 6 batches since filming trying to figure out the best way to keep the filling in. Cutting the slits help and I smooshed the edges together really well with my fingers and didn't use the fork. The jam oozes more than the cream cheese, I did some just cream cheese filled ones and they turned out great. Also cooked them at 450 for 14 minutes and only had a tiny bit of jam coming out!
    Also no leaking in the air fryer, prepped as above with slits and egg wash, 390 Air crisp on a parchment round in the fryer basket, 8 minutes flip, 2 minutes.

    Keto Puff Pastry
    29 g Unflavored Isopure whey protein isolate (one packed scoop)
    30 g Coconut Flour (1/4 Cup)
    30 g Oat Fiber (Naturtonix is what I use) (1/4 Cup + 2 Tbs.)
    1 tsp. Xanthan Gum
    1 tsp. Gelatin
    3 oz. Grated Butter (Then Frozen) (6 Tbs.)
    6-8 Tbs. Ice Water
    Pinch of salt
    To make the toaster strudels I just made a big batch of keto strawberry jam. Then took out 3 Tbs. of the jam and added melted gelatin. I used 1/2 tsp. of gelatin bloomed in a teaspoon of water and microwaved it to melt then added it to the jam to make it stiffer.     For the cream cheese filling you will only need:
    2 oz. Cream Cheese (softened)
    1-2 Tbs. Powdered Keto Sweetener (To Taste)
    1/2 tsp. Lemon Juice (optional)
    1/4 tsp. Vanilla Extract
    For strudel frosting:
    3 Tbs. Powdered Keto Sweetener
    2 Tbs. Heavy Cream
    1/4 tsp. Vanilla Extract

      OK, so I have a request for you to work on if you think you could do it. Do you think you could come up with a low carb boba tea or at least the boba pearls and the sugar "sauce"? I've seen a couple "keto boba tea" substitutes, KetoFocus teamed up with ChocZero and made one with their syrup, oil and gelatin...I'm sorry but that sounds disgusting and nothing like boba. A couple channels, Healthy Ambitions is one, used the viral noodle technique with the sodium alginate and calcium lactate. I've made the noodles so I know the consistency that turns out to be and that's still not boba. Boba has that chew to it from the tapioca. I don't know, I'm not a very good cook much less a chef but I thought maybe if you used like oat fiber and coconut flour or something like that maybe? Maybe started with stuff like that for the pearls and brown sugar Swerve for the signature sauce that usually comes in boba tea. You'd truly be like a GOD in my book if you could figure it out! Just a suggestion. Hopes and fingers 🤞 crossed you can because to have that as a treat every now in then without having to consume enough carbs for entire year would be HEAVEN! Love your channel!     Ohhhhh my goodness this pastry is a keto GAME CHANGER!!!
    I heated up my pot roast leftovers in a cast iron pan and topped it off with your pastry and we enjoyed the BEST keto pot pie we've ever had. Your channel is my new obsession.

    Freeze the filing before it goes in the oven, that way it takes longer to boil. Also, small hole or two on the top to prevent blowing out the sides. Excellent keto recipe!

    I took you at your word that the possibilities for this pastry were endless and made Scottish-style savory beef and mushroom pies in 4” spring form pans. The pastry held up well and complimented the savory beef and mushroom filling very well. I paired the finished meat pie with ice cold Guinness Stout and enjoyed every bite. Thanks for your efforts.     Gluten free keto dough can be fussy and fragile to work with. I was gifted a dough press kit and it was a game changer. Mine are plastic, round and hinged in the middle. I've seen square and rectangle shapes for sale online. They're quite inexpensive, can be made of plastic or metal, and come in a wide array of sizes too. They've saved me a lot of time and frustration. As you fold over the dough and press them closed, the pressure seems to be more evenly distributed and their fluted edges makes an attractive, tight and tidy seal. I've found that because they're the same uniform size, they cook more evenly too. The molds can be used for fruit filled tarts, Asian dumplings, ravioli, pierogi, hand pies, Cornish pasties, empanadas...you name it.

      That's how we learned in pastry school, much more accurate than measuring cups and spoons. You're welcome!! For croissants I would add a tiny bit more water and definitly roll out a bit thicker. Enjoy!😊

      @@KetoUpgrade Have you made this into croissants? Have I missed a video!? That is my ONE weakness when it comes to bread/pastry. I absolutely LOVE croissants. NOT crescent shaped bread, actual Flakey, Fluffy, butter filled layered croissants that have huge air pockets inside. I even bought the Hero croissants once; they are good, but I can't really afford to pay $6 a piece for croissants when Kroger has a box of 4 for $5. I know I shouldn't but they are such a nice treat. I am so afraid to try another "bread" recipe because I've had to throw away so many ingredient fails. How would it work since croissants have yeast but this is processed cold?

    Oh My God, SO LEGIT! I just made this today, and I was pretty skeptical about how it was gonna taste because TOO many have tasted like cardboard (you all know what I'm talking about). Not sure if it was gonna be flaky or not, but I'm happy to say it's FORREAL! I can't post a pic of how it turned out (let me know where I can post, if there is a place!), definitely not as pretty as hers, but it didn't disappoint in taste or texture. Mine was crispy on the outside, soft on the inside. I didn't do the white frosting part as the one I made was too runny, no matter how much I put in the powdered allulose (instead of monkfruit). I used Choczero's strawberry syrup, and that really worked! I followed everything else pretty much the same, other than two tsp of Lupin flour to top off the 1/4 coconut flour measurement (as she said you don't need a full 1/4 cup, but I still topped it). THANK YOU THANK YOU! I'm now a HUGE fan!!

I have tried several of your recipes and actually like eating again....the whole cardboard keto thing was really pissing me off. I haven't eaten a Pillsbury strudel since they quit making blueberry cream cheese...but I'm going to take a crack at it with this puff pastry recipe...fingers crossed.     Interesting recipe. Thanks for posting. They sell pocket pie molds that are similar to gyoza molds with hinges on one side. Seems like this might work in those.

    So I got lazy and didn't feel like folding and waiting. So I rolled my dough out one time, dusted each side with oat fiber, sliced it in 6 sections, stacked them on top of each other and then rolled again 🤣 hope it works. I also used vanilla protein because that's all I had. I'm using it as a pie crust. Fingers crossed 😅

    I just recently discovered your channel and I love it! I'm not a trained cook, but I have loved baking since I made my first scone when I was 8. I'm really excited to try this recipe as I have been craving a vanilla slice for a while. Since I live in Australia, some of the ingredients are a little hard to get as the Keto diet is popular, but we don't have the population amount that America does. So I'm going to have to wait untill I get some oat fibre for this one! Many thanks.

    I buy gloves from Costco that I use in the kitchen when handling meat or pie dough. I can't recall if they are latex or some other material, but they are like latex. Anyway, I find that the gloves prevent the heat from my hands from warning up my pie dough. They also help keep junk out of my finger nails.

    Definitely NOT a toaster strudel, but a Pop Tart thingy. Lol. Anywho, thx for this recipe and Since you have so many cool ones I went ahead and subbed.
    I changed these things and will modify when I make this again, probably tonight. 1. Officially add salt. I put in 1/4 teaspoon of regular table salt originally. And it wasn't nearly enough. So next time I will add 1 whole teaspoon. 2. The dough had absolutely no flavor what so ever. So I may sub 2 or 3 tablespoons of the butter with Lard. (And wish me luck too). And also I may further experiment with adding butter flavoring extract or pastry or sweet dough flavoring extract or something like that. 3. I dusted with VWG and a little Oat fiber because the oat fiber I use is very noticeable so I wanted to use as less as possible. 4. The dough also, in my opinion, needs at least 1 tablespoon of sweetener of choice, probably powdered. Because granular may interfere with the layering (Not sure of that. I am not a proper chef. Lol.)
    5. I had a handful of white chocolate chips that I want to use up so I added them to the frosting. And nothing to write home about.
    6. I used all 8 tablespoons of the water. And I, for a second, figured I'd need an additional tablespoon or something but I held off and it was great I did because the dough came together perfectly at the very end.
    Overall, the technique is on point; with grating the butter 👍 and then coating them with the dry ingredients. Pretty awesome. The finished product had a 99% perfect texture and I put the slits ontop for venting so the filling wouldn't explode out. Will def make again.

      If you are making other recipes you should be putting all the ingredients into a counter of some kind. I like carb manager app for counting. The only thing in the puff pastry that has carbs is the coconut flour. Mine had 8 carbs for 30 g.

      Thanks! You can make croissants out of this but you need to roll it much thicker. I have a live video where I made the chocolate croissants. Just did rolled rectangles with the chocolate in the middle and they turned out really good.

    I think you should poke them with a fork before baking so they will release hot air from the top, not from the sides. Try it.

    I just want to say I just found your channel. We must be kindred spirits because I am obsessed with keto baking experiments too! I love that you bring so much experience and actually do things correct. Drives me crazy watching other you tube cooking channels, and I am saying no don't put that in now or what are they doing... I am currently trying to figure out sourdough bread with real starter. Many fails, but I'll keep trying.

I don't watch many at all, mainly serious keto, and highfalutin low carb cause they measure and do things right most of the time. Good luck on your sour dough, haven't tackled that yet, still working on a yeasted bread and pizza crust.

    Would love to know how big to cut the triangles to make croissants? Also how long to bake if used as a puff pastry on chicken pot pie? Thank you for all of your hard work!

      If I'm not filming a recipe I just cook by instinct usually. The pot pie I don't remember if I said how long it was in the oven but I cooked it until it was puffed and golden brown on top. Sorry I can't be of more help.

      Thanks, you can use bamboo fiber. You can swap out in some recipes and not others. Cookies it usually works but cakes it doesn't.
