Infatti la vera carbonara non ha il tartufo. Né pepe aggiuntivo oltre a quello del guanciale. E solo i tuorli dell'uovo. Meno ingredienti ci sono, più il piatto è autenticamente italiano. L'esempio migliore è l'aglio e olio. Due ingredienti e semplice da fare. Ma farlo davvero bene è veramente difficile.

We all use it. I'm furlan and I only use that term. Never said "Mortadella". Only "Mortazza". And we furlans eat a lot of it and other... ahm... what's the English for "insaccati"? Whatever, our diet is made by pork and meat in general. Pasta came often also, polenta its a typical dish here, then we also have selvaggina or wild animals. Fish, a lot of them. Well, you know, in Friuli we have mountains, hills, plains and even the sea so... It's kinda an experience... Like the whole rest of Italy. I can't think a part of Italy that it's not unique. For its dishes, environment, traditions etc. Seriously, if we only can fix the problem of Mezzogiorno, we will be perfect. Nobody's will stop us. We will be the best country in the world.

sembrano facili , in realtà è difficilissimo prendere la giusta quantità di ogni ingrediente, per esempio la carbonara: se metti troppo pepe la rovini , se cuoci troppo l'uovo si straccia invece deve rimanere cremosa , se allunghi con troppa acqua di cottura viene lenta e la rovini, se metti troppo formaggio diventa acida e la rovini , se metti troppo sale nella pasta la rovini deve essere bilanciato con la salinità del guanciale e del pecorino,se cuoci troppo il guanciale si indurisce e la rovini deve essere croccane fuori e morbido dentro....bilanciare correttamente tutti gli ingredienti è una delle cose più difficili da fare davanti ad un piatto del genere.
Quando guardo video di stranieri che provano i nostri cibi quotidiani e vedo le loro facce strabiliate, quasi emozionante mi fa pensare a quanto siamo fortunati a mangiare ogni giorno queste prelibatezze. La reazione al tiramisù è spettacolare ahaha

This video is a great example of the delicacy of Italian pasta - not overcooked noodles drenched in sauce, but rather perfectly-done pasta varieties only complimented by a nice addition of ingredients which mix exquisitely. I once made "bucatini all’Amatriciana" for some friends (that was the spicy pasta dish Sam tried), and it's AMAZING. I also made tiramisu from scratch, which involved a good deal of kahlua "sprinkled" over the ladyfingers...which really soaked them. We all got drunk from the dessert. Viva Italia!

We all use it. I'm furlan and I only use that term. Never said "Mortadella". Only "Mortazza".
And we furlans eat a lot of it and other... ahm... what's the English for "insaccati"? Whatever, our diet is made by pork and meat in general. Pasta came often also, polenta its a typical dish here, then we also have selvaggina or wild animals. Fish, a lot of them. Well, you know, in Friuli we have mountains, hills, plains and even the sea so... It's kinda an experience... Like the whole rest of Italy. I can't think a part of Italy that it's not unique. For its dishes, environment, traditions etc.
Seriously, if we only can fix the problem of Mezzogiorno, we will be perfect. Nobody's will stop us. We will be the best country in the world.

sembrano facili , in realtà è difficilissimo prendere la giusta quantità di ogni ingrediente, per esempio la carbonara: se metti troppo pepe la rovini , se cuoci troppo l'uovo si straccia invece deve rimanere cremosa , se allunghi con troppa acqua di cottura viene lenta e la rovini, se metti troppo formaggio diventa acida e la rovini , se metti troppo sale nella pasta la rovini deve essere bilanciato con la salinità del guanciale e del pecorino,se cuoci troppo il guanciale si indurisce e la rovini deve essere croccane fuori e morbido dentro....bilanciare correttamente tutti gli ingredienti è una delle cose più difficili da fare davanti ad un piatto del genere.

Yesterday someone say to me "you italian just have pasta and pizza" and I thought "yes baby, poor you, better you never eat real italian food because then you can't appreciate the trash food you eat evreyday" P.S. every italian region, every city have its traditional dish. .It's not only pizza and pasta.

Now you understand my friend. What you have tasted it's not just food. But an entire culture and centuries of history.
This video is a great example of the delicacy of Italian pasta - not overcooked noodles drenched in sauce, but rather perfectly-done pasta varieties only complimented by a nice addition of ingredients which mix exquisitely. I once made "bucatini all’Amatriciana" for some friends (that was the spicy pasta dish Sam tried), and it's AMAZING. I also made tiramisu from scratch, which involved a good deal of kahlua "sprinkled" over the ladyfingers...which really soaked them. We all got drunk from the dessert. Viva Italia!
