Thanks for the vid! Always thought about making fish tacos out of walleye and now I have a recipe. What kind of oil do you use? I found peanut oil to be the best especially when cooking a lot of filets. Remind me when we go out in the spring and I’ll give you a bottle of Salsa Huichol from Mexico. It’s what Mexicans eat with seafood and it is amazing.
Walleye is awesome in tacos! One of my favourite ways to eat it (good ol' fish and chips is #1). For frying, I used olive oil. Not the best choice for frying that's for sure, but it's all I had at the time.

Cheeks are the best part in my opinion. Cook'em the same way you'd do scallops. Pan seared with butter and salt. Delicious!
