Hello friends! Today I present to you a very tasty, quick and easy to prepare recipe. Baked eggplant with hard-boiled eggs, cheese and cherry tomatoes are a perfect solution for lunch, dinner or as an appetizer. I make them very often because my family loves them! They are so tasty they are addictive! All you need are a few simple ingredients and very little preparation time! Try these delicious baked eggplants with hard-boiled eggs, cheese and cherry tomatoes and let me know in the comments what you think!
Ingredients:
- 1 eggplant
- 3 eggs
- 60 g (2.1/2 oz) cheese
- 8 cherry tomatoes
- Parsley
- 2 tablespoons of mayonnaise
- Salt, pepper, oregano
- 2 cloves of garlic
- Parmesan

Watching from the US, this was a beautiful step by step prep, and presentation. Made me go back and get a large eggplant 🍆 lol 😂
Comments here are so mean. When I first started out cooking I would have loved for someone to show step by step process. This is a perfect dish. Perfect example of making said dish. Keep up the good work. Started cooking at 9 and just winged things. Everyone is taught how to prep. It cost nothing to be nice. Again love this.

I like the vibe that comes with watching the step by step process of cooking. I find it calming and not rushing like this world would have people be, instead it is like asmr for me. ❤
As a retired trained chef of 40 years. I received good and bad reviews. But my good reviews out weighed the bad ones. And the thing the customer just didn't like it. To each is own, they didn't like my recipes I'm sorry I couldn't please them, but for the other 100,000 I did. We can't please the masses. All we can is try, and when I was in Culinary Institute of America the first thing we were taught is too never knock our mothers grandparents or family or friends as they tried the best they could to how they were taught. Cooking is and art just like anything else it needs to embrace and practice, loved.

I might possibly oil, season and cook the aubergine slices a little before adding the filling. As undercooked aubergine I find unpleasant.
But the whole finished dish does look good.
I plan on trying this next week.
Won't the tomatoes and toppings help it cook more?
I was thinking the same thing- dipping them in butter and dredging in seasoned panko or breadcrumbs and baking a bit before adding toppings

How about tofu? That should work just fine. Add a little turmeric and you’re good to go!
I was going to suggest some chicken or maybe just a bunch of herbs and spinach.
