Lemon Mascarpone Cake

  • Fluffy and bursting with fresh lemon flavour, this yummy mascarpone cake is absolutely delicious and easy to make!
    Ingredients
    Cake pan
    - 1-2 tablespoons melted butter
    - 1-2 tablespoons flour
    Cake
    - 325g plain/all-purpose flour
    - 25g corn starch/cornflour
    - 2 teaspoons baking powder
    - 180g butter
    - 250g mascarpone cheese
    - 250g sugar
    - 4 eggs
    - 2 teaspoons vanilla extract
    - ¼ cup lemon juice (125ml)
    - 1 teaspoon lemon zest
    - ¼ cup milk (125ml)
    Method
    - Preheat the oven to 180°C/350°F (160°C/320°F fan).
    - Melt the butter. Grease the cake pan with melted butter and coat with flour.
    - Sift flour, corn starch/cornflour and baking powder. Give it a mix and set aside.
    - Add butter, mascarpone cheese and sugar into a bowl. Using a handheld mixer, beat until smooth and creamy.
    - Add eggs one at a time and beat until combined.
    - Add vanilla extract and beat until combined.
    - Add the flour mixture, few tablespoons at a time and beat until combined.
    - Add lemon juice and lemon zest and beat until combined.
    - Add milk and beat until combined.
    - Pour the cake batter and spread the cake batter evenly.
    - Bake for 40 minutes or toothpick inserted into centre comes out clean.
    - Leave to cool in the cake pan for 20 minutes before placing onto a cake stand/plate.
    - Dust with powdered sugar.
