- Italian Lemon Ricotta Cake Recipe - NO FLOUR
This cake melts in your mouth. It's a mix between a cake and a cheesecake. It's fragrant and delicious. I hope you give it a try.
RECIPE:
300 g ricotta (1 cup + 1/2 cup or 10.6 oz)
100 g sugar (1/2 cup)
40 g butter (3 tbsp)
3 eggs
50 g cornstarch (1/3 cup)
1 tsp vanilla extract
30 g lemon juice (2 tbsp)
lemon zest
NOTES:
- Use the same size pan as mine. This is the pan I used: amzn.to/32ICJgn OR you can buy the complete set of springform pans set: amzn.to/3AI8Klg
- If the Ricotta you use it's wetter than the one I used, I suggest draining for a bit to remove the excess liquid.
- Clean and dry well the whisks before whipping up the egg whites

I made this and it was wonderful. To dress up the cake a little, I made some candied lemons by using 1 to 1 ratio of water and sugar, brought that liquid to a boil and then added thinly sliced lemons and simmered until the lemons were translucent. Then I placed them on top of the cake. It looked amazing. A brilliant recipe. For those of you who have a 375 or 400g tub of ricotta, just use 4 eggs instead of 3. Worked beautifully. Thanks again for your recipe!

I tried it, when I took it out of the oven the centre somewhat deflated (it was puffed up inside the oven). Is it normal? Anyway taste and texture were very good, really smooth, I will surely try to do it again. Thank you!

Since this is a no-flour recipe, it really lends itself to a Keto version simply by substituting the sugar with something like Allulouse or Swerve and using something in the place of the cornstarch. I'm thinking Xantham Gum might be the best substitute if you could figure out the amount. It requires far less than cornstarch when used as a thickener/binder.. If anyone knows how well it would work in place for this recipe I'd love to know.

Hi Betsy! Thank you for trying my recipe. My batter was pretty thick. Could it be that the ricotta you use was wetter then mine? If that is the case, it would be best to drain it a bit first. I hope this helps for next time. Let me know how it goes 😉

You can make your own! Use 4 cups whole milk 1/2 heavy cream and 2 tbsp white vinegar. Heat milk to 195f then mix in vinegar for 4 seconds. Leave for 10 minutes and strain.

I have tried baking with both coconut and almond flour, but didn’t like the texture.
I once made a cheesecake using Jelly. Do you think a sugar free jelly would work please?
Hi Helen. I didn't use baking soda or potato starch in this cake. You'll need cornstarch or arrowroot powder or rice flour. I don't suggest using Jelly for this cake. I hope this helps!

I followed the recipe step by step but my « dough » was much thinner-almost runny-after I incorporated the ricotta. What kind of ricotta was used in the recipe? Should it have drained first?
Hi! The ricotta I used was already drained. It's a good idea to drain the ricotta if it's more liquidity than the one I used in the video. The brand I used it's S. Lucia but it's the ricotta that comes in a packaging with no lid but covered with plastic wrap. I hope this helps :)

La ricotta che ho usato io era già abbastanza asciutta, se tu dovessi notare che la ricotta che stai usando è troppo bagnata, conviene sgocciolarla :)
