I love anything citrus and this cake looks lovely. I bet orange will also be a good substitute for lemon. Love how smooth that frosting looks. This cake and an ice cold unsweetened tea would certainly make summer heat more tolerable. Tfs. Stay safe!
I baked this cake with a friend and it turned out delicious 😭 it was sooo soft and flavoury ❤️ the base of the cake wasn't dry at all, it was just perfect!! And you could really taste the lemon!! The recipe was also super easy to follow :) totally recommended 10/10
This cake was super easy to bake and super easy to make! I added extra lemon zest in both the batter and frosting, and then just before serving, I sprinkled more on top for decoration. That all helped balance the sweetness of the frosting. Thank you for sharing this recipe!

That frosting is the same as the filling for Lemon Ice Box Pie too. You can use a crumb base, make the twice the amount as the recipe for the frosting, pour it in the pie base and refrigerate, preferably overnight to let it firm up. If you like a firmer pie filling, simply add an egg or two and bake at about 375F/180C for around 15minutes until it starts to firm up a bit around the edges and is still jiggly in the middle. Either version is really nice.
@ Gemma Stafford's bigger bolder baking channel has an instructional video on how to make your own sweetened condensed milk. It's pretty easy. Or you could hold off on this one til your next shop and get some then :). The frosting is really only the filling for lemon ice box pie (get another can or two of sweetened, condensed milk to make that one too - it's quite nice). If you want a firmer filling for the ice box pie, you can add an egg or two and bake it at about 350-375F/180-190C for around 15minutes til it starts to firm up on the edges but is still jiggly in the middle.
It is rare for one of these to actually make me want to get out of bed and head to the kitchen, but you have! Also the giant slice made me heart smile because most of these foodie video do a guilt-free portion... and I always wonder what happens after filming 😂😂😂

This recipe looks super delicious! I just finish making it and I’m eating it right now. I would highly suggest to NOT REFRIGERATE THE CAKE though because after you refrigerate it, the cake tastes like raw dough and terrible! (I know because I’m eating it right now). So I would just highly recommend to eat it after it finishes baking and a bit cooled down but still warm at the same time. The condensed milk frosting is exactly how you expect it to taste so there’s no feedback for that. But trust me on this advice for the batter! I legit just made it and I know how the result is!

Just add extra vanilla for a vanilla cake/sponge. I reckon you could probably use oranges instead too for an orange cake 😉
I have a huge lemon tree out in the yard... I doubt that frosting is stable though... I'll probably make a lemon cream cheese frosting.
