      @@carriewhiteduck1478 LOL... I watch her videos on my phone WHILE I'm in the kitchen cooking. She has inspired me to have "cooking days" where I just cook and cook a bunch of meals to have on hand and it's really decreased our "I'm too tired to make dinner, let's just get fast food" days. We rarely eat out anymore and I'm such a better cook than fast food anyways, we're loving it! :)

    I really enjoyed these “what we eat in a week” videos, especially during pantry challenge. It’s refreshing to see you put meals together on the fly and it gives us lots of ideas on how to do that with the foods we have. Also just your raw honesty, it shows us real cooking, not all the staged stuff.

    Hey Becky give this suggestion to your Momma. Your comment about her cornbread made me think of this. 😉. Years ago my Mom made me & my sisters cookbooks with her recipes as a Christmas gift. Mom hand wrote the recipes for each of us. My Mom is now 79 years old. That is something special we will all have & can pass down to our children. Was one of the best gifts ever. Not only having her recipes but seeing her beautiful handwriting. She has since had a stroke & lost that ability. ♥️

      I did the pantry challenge once. While it saved a lot of money, to replace what we used actually cost us double (not everything was on sale). I like watching other people do it and it is good way to clean out things and use up the items that people don't really love.

      Me too! I usually do a pantry challenge beginning of my harvest to use up anything in the freezer ( room for fresh ) my potatoe bin is almost gone anyways, canned goods are LOW and one can never have too many herbs ♥️ Am doing WAY extra rosemary this year ... put a little olive oil in your pot, sauté desired amount of rosemary THEN put back your mash potatoes - mix well and ENJOY. Oh MAN it’s my new fav way for potatoes now. My son was up to stay for abit and he made supper and did the potatoes as above and 😊👍😌 WOW just WOW!

    I did not do the pantry challenge, but watching these videos have helped me pay more attention to what’s in my fridge & freezer that needs to be used up. 😊 I’ve been making frozen green beans like you for a while now and love them so much. 😀 I sometimes will sauté them in bacon grease too. 😋

    Love watching your videos and you totally inspire me to get cooking and to use what I have in my freezer and pantry before heading to the grocery store!
    Which I should be doing anyway!
    I've learned lots of tips, hints, and pointers, and have been wanting to try to make your homemade vanilla extract and sour cream, among other things. It looks so easy, and the pure vanilla is extremely expensive in the stores. With the cost of everything going up, up, up, it's necessary to find ways of using up we have and to make things from scratch which are usually a heck of a lot cheaper!! Thanks for all you do
    to bring us these videos.

    Also, spraying your dishes over the sink? What a great idea! Becky's mom, you're brilliant!
    If you're ever out of butter again, I HIGHLY recommend lard for your cornbread grease. Bonus points if you cook it in cast iron. That's how we do it in the South!

    slow cook pork ribs in a little salted water, when almost cooked, chuck in potatoes, pumpkin, carrots, cabbage. once cooked chuck in some dumplings (self raising flour, salt, mixed to a dough), once dumplings are cooked you have a good old fashioned kiwi boil up😉👍🏼 although we would use cress instead of cabbage or maybe puha mmm

    I just want to say a simple "thank you" for doing the pantry challenge. I learned so much and you inspired me in my little downsize to apply some of what I learned. I foraged my small chest freezer for a month, as well as rotated my pantry as well to use various things. I hope you continue at least weekly to do this type of video. You are a wonderful teacher!

      I wanted to piggyback on what River Ramblings and so many others have said in so many different ways. You are so very good at what you do, Becky, and and have a real passion for it. You are a wonderful teacher. I say that in all candor and with the experience of 23 years of teaching high school students and 11 years of training and evaluating teachers at the state level. You are a WONDERFUL teacher. You are great at what you do; you explain what you're doing and why; you are authentic in your successes and boo-boos - and show how to make the boo-boos work anyway; and most of all, your sense of caring leaps through the screen and touches each person who watches. We feel it. It's genuine. I will say to take time for just you. Teaching, in whatever form it takes, is very hard work and is both emotionally and physically exhausting. While we all would love to see every moment of every day-- because you're just *that* engaging - we all also want you to enjoy your life with your friends and your family. Take time for you. We're here. Doubt we'll be going away any time soon :)

I cheered with you in your successes; finding mushrooms, beautiful homemade sausage rolls, the glorious transformation of your front yard and on and on. I cried with you when Gizmo got sick then passed and worried with you when your chickens got hot in record heat, my heart sank with you when an iffy egg went into molasses cookie batter and on and on. you have a beautiful family and a blessed life and girl, you deserve it! *HUGS!*

    I would love to see more What We Eat in a Week videos. Your videos have become a way of visually meal prepping which is sometimes more helpful than just reading a recipe and deciding if it sounds good lol don't feel obligated to do it every week! You deserve time for yourself too 🙂

    One of my favorite things about you is that you never give in to the temptation to quit. It doesn’t matter if it was an ingredient mishap with a recipe, a broken dish, a spilled mess or a garden oops! You share the struggle, smile and try again. I like to hope I’m a fairly positive person but there are times when the weight of reality can be heavy and it’s fair to say that I’m also tempted to just close the door and say, “I’m done”. But then, here comes one of your videos full of smiles and a positive attitude and a ‘I will not give up attitude’. I watch and find myself saying, let’s do this! This is not to say that you don’t have the, ‘I’m done’ days too but for the most part you keep it real and I am so grateful for that! Thank you for sharing, you are inspiring to so many of us and it’s a pleasure sharing this journey with you. God Bless You!

    It has been so fun to watch you through this pantry challenge. My son and I always watch your channel and we have really enjoyed seeing all of the things you have made. He is younger and he couldn't believe that you could go so long without going grocery shopping. We don't have the space for extra freezers or a garden but once we do, we want to get on your level! We live in Portland area so its nice to see someone in the area with a huge garden. Its truly inspiring!

    I think this is probably something I should try to do, especially with the cost of food going up. I have a pretty stocked pantry/freezers, but get in a rut making the same meals over and over again. I find your videos to be fun to watch and give me ideas. I think my husband just rolls his eyes when he sees me watching cause it usually means I come up with another idea! Thanks for making your videos and can't wait to see your grocery haul after 2 months of no grocery shopping!

    When I make cornbread I let it sit on the counter for a minimum of 30 minutes before I bake it. This allows the cornmeal to soak up the liquids. The result is a softer, less crumbly texture and so delicious
    When cutting small things in half such as tomatoes or grapes place the grapes/tomatoes on a small plate or plastic lid. Cover the grapes/tomatoes with another same sized plate or lid upside down on top. Then pressing down lightly and run a knife in the small space between the plates. The the grapes/tomatoes will all be cut in half with just one cut.

    Love seeing you cook any meal. Reminds me of my mom who I lost a few years ago. Seeing you garden reminds me of my grandfather who was a farmer and taught me how to as well. I can’t garden so seeing you have fun really takes me back and gives me hope I can return to it again.

    I NEVER thought about making broth from the rib bones. I had 4 racks in my freezer for years from my dtr's college graduation party. I cooked them up and my son took them to his motorcycle club. They were beef ribs but again, never thought to include those in broth. Congrats on completing the challenge. I didn't do it, but I made it a point to shop my pantry and my freezer and get rid of things. Made sure I was more aware of what I had. I will watch whatever you want to film. Love your videos.     Yes, please. I loved watching what you eat in a week. Shopping your pantry, fridge, freezer, etc. It was great watching your inspiration in your creations. But you don't have to do every week, just pick a week here and there - certainly don't want you to get burnt out. :)

    Here in southern La. we always cook our cornbread in a cast iron skillet & we use bacon drippings, hog lard or crisco for the oil. It depends on what area in the south that you are from that determines that or your preference. In the green beans we add bacon drippings, onions & garlic with some of Tony Chachere's cajun seasoning.

      This is the Southern way and the way my mama taught me to do it in the panhandle of Florida! We either made it the way you listed or the sweet way with a can of creamed corned and served it it with butter. Either way with the bacon drippings!

      A 1945 cookbook for my cornbread ! The best!

    Becky, I am a newer subscriber and I am HOOKED on your videos! I love watching your what I eat in a week videos and this pantry challenge has been my favorite series I've watched on UA-cam in a while! You gave me so many ideas on using what I have and wasting less in my own kitchen. I have always been one that goes out and buys every little needed ingredient for my recipes--even if it's an ingredient I know I won't use up after the recipe--and watching you has made me realize that I don't need to do that!     Absolutely love the Cast Iron pan the Josh gave you for Christmas, here in BC Canada on Amazon it’s $540 . It’s beautiful, I have many cast iron skillets, I have a Wagner that is over 100 yrs old , a circular skillet with the round cut outs that I make Norwegian pancakes and serve with lingonberry jam .
    I have several email cast Dutch ovens and just pasted on some to our daughter .

    Awesome! We just got our wood stove I can’t wait to install it. I’ve had one ever since I can remember, until we moved. It’s saved my life many times. In a few snowstorms where we went without power it cooked some really flavorful meals for me and my family. Memories made on the wood stove are almost better than the regular stove. 😊 🪵 🔥

    Yes, yes! Please continue with sharing what your meals are. But ONLY when you have time and it works for YOU. You are such an inspiration, your self-challenge in the final week is so expected. Similar to an athlete when presented with the final laps, the final round and so forth; that is when your mental stamina needs to nudge on the physical work. YOU did it! Congrats! I found myself being challenged right along with you as much as I could. I fill my pantry from the store, but I did weed out the shelf sitters in my pantry and used them up. I think you have done a great job with this challenge and I have thoroughly enjoyed your sharing with us. 🙂

    I loved these videos. I did the pantry challenge along with you and you were so inspiring and motivating. I too was DYING for some fresh veggies. First thing I made was a salad. I used the money I saved from grocery shopping to top off my pantry and freezers where I was running out. It was great and helped me see what I needed to add more of and what I had plenty. I think I will do that challenge every January and February. I would love to see you continue showing your dinners but don’t overwork. Remember how busy you are going to be in the garden. I’m looking forward to the garden videos this summer. ❤️

    That Dutch Baby is basically what we in Finland call pancake. Sometimes we put meat like ham or sheredded chicken and veggies in the batter, sometimes apple, raisins and cinnamon and sometimes it's a way to use leftover porridge from breakfast. I do love it with just jam and either whipped cream or vanilla yoghurt.

    I don't grow veggies but when green beans are at a good price ($.99/lb) I buy 5 -10 lbs and bag/freeze. I make with just S&P, fresh garlic, olive oil. Saute to slight blister, serve while still slightly crunchy. Yummie. The black beans looked great too! Good carrot & leek haul, great job. Best wishes from Miami.

    Picked up a covered cast iron casserole and a flat grill, this winter I had to bake bread and a whole chicken on the wood stove during a power outage. It was fun!

    My reciepe simple! 1 and half cups corn meal, half cup flour add milk till you get the thickness or thiness you like mix together, preheat oven 400 and put some oil in the bottom of your cast iron skillet and let it stay in there while your oven preheats to 400 degrees 32 or 35 mins if not brown on top at the end of 35 mins then broil to the desired color you like it never fails and yummy!

    Try heating bacon grease in your cast iron skillet in the oven before pouring in cornbread batter and then return to the oven. Gives great flavor and an amazing crispy edge!

    You can flavor charred green beans by adding a little bacon fat to the cooking fat.
    You can add some crisp crumbled bacon too, and maybe chopped pimiento.

    Thanks a lot, Becky! We tried the pantry challenge for the whole of February... we kinda did it... with a few minor mishaps but we got right back on track! We saved some money! So maybe, it's something we can do for the rest of the year but with some new rules... We're working on those still! :D Greetings from Argentina!
