hey becky!! i am definitely, without a doubt, much younger than your intended age range. most of your viewers are definitely old enough to be a parent (or maybe even a grandparent!) of mine lol. that being said, I've always loved cooking from an early age. I think that maybe I first realized it on my tenth birthday when I asked for a good five cookbooks on my birthday, as ten year olds do. I would suggest to prepare your masa earlier or even the day before and wrap in plastic wrap. This will allow the moisture to hydrate better and the result is a tortilla that doesn’t crack. I also add more water than on the instructions
Update: I've been cleaning out my fridge, cabinets since I first started watching your videos several weeks ago. It's been SO SATISFYING to go through these long neglected ingredients and incorporate them into delicious recipes! Thank you for the wonderful inspiration and encouraging my creativity in the kitchen! Your channel has truly been a blessing to me, in more ways than one. Here are a few fun recipes/techniques I've made recently... - Spaghetti squash chicken & kale Alfredo bake - Black bean, mushroom and onion burgers - Tortilla chips, from store bought tortillas. They were awesome! - Carnitas, mushroom and tri-color refried bean burrito bowls (out of canned black beans) - Coconut chicken curry over rice (made my own rice for the first time) - Paleo brownies and banana nice cream - Hotdog Philly over salad - Quinoa noodle spaghetti - Pan fried bacon (I've always made it in the microwave before)
Quinoa is great to throw into other dishes to just add some nutrition. I throw 1/2 cup of quinoa into each pot of soup, chili, oatmeal, spaghetti, lasagna (tomato sauce), fried rice, stir fry, etc. It's amazing how easy it is to add that extra "umph" of nutrition. I also throw some Chia seeds into lots of baked goods, like muffins, cake, brownies, etc., for the same reason.
Great idea to.add to other dishes for added nutrition. I'm going to start working my way through.the huge bag I have, my family all.complain about it but think they'll be up for having it added to other dishes.
@@beccihayward975 I wish you luck! My husband and I don't even notice it in most dishes, and in the ones that we do it's absolutely fine. I also heard about scattering already cooked quinoa on salads and putting it in chicken salad, egg salad, tuna salad, etc. I haven't tried it, but I probably will this summer.
In December my hubby broke his ankle. In January I slipped on the ice and broke my back. So…. February Pantry Challenge was started. Our first time! We are loving it! Forced us to go through and use up those unusual items that have taken up space. This is also helping us use our garden bounty that we worked so hard in canning in 2021. Your channel is super fun and I'm impressed with your energy level. Side note on yeast proofing - you need to mix the salt into the water until completely dissolved before adding the yeast. The granules will kill any yeast they come in contact with. The same goes for dry ingredients going into yeast, you should thoroughly mix in the salt first to avoid killing some of your yeast

I don’t know if you have ever tried it but to peel your eggs a little easier if you crack it just a little and then stick a spoon under the shell it almost peels it completely together, and it super quick.

My Hubby gives me the eye squint & roll when he sees me put butter on anything. He doesn't like butter & I only use organice grass fed butter. I keep telling him this butter is sooo good for you & you can only get certain nutrients from butter, so it's a win win for me 😁👍. I would love to find a good recipe for homemade cream cheese, I don't like all the unknown additives they're putting in Phillidelphia (sp?) Cream cheese these days. Our Publix supermarket hasn't had their organic Greenwise cream cheese for months now 😐. He uses preserves on all his baked goods except for those that don't need anything extra on them 🙃
Becky, I learned a tip from watching Mary's Nest on UA-cam. Turn on the light in your oven and place your dough in their to rise. It works like magic. This way you can make your no knead bread in just a few hours. I use this technique for all of my yeast breads. My kitchen is really cold in the winter even though we have central heating. I'm also doing the pantry challenge. I also order from Azure Standard. when i get any cheese i buy 2 - 5 lb. bricks, 1 I slice (I work at a restaurant) and shred the other. Last month I got pepperjack and cheddar. and i had left over cranberry sauce from Christmas so I made grilled cheese with pepperjack and cranberry sauce. Becky, I love your channel.
To ease into a weekly, menu plan begin with a 7 day (columns), 3 meal (3 rows) grid; I like a 4th short row at the bottom for comments, notes, and sometimes prep ahead todo's. Then concentrate on one meal of the day until you've got that one working for you meal chart wise; give yourself permission to fill in the other meals if its not a problem. To begin, plan in 2 or 3 day increments using the 7 day chart; give yourself permission to dot additional meals for during the week and even begin the next week's 7 day chart early. Or, plan 2 to 3 major cooking events seperated by blanks during the 7 day chart. Then fill in the blanks using the left overs, or making multiple meals from a single, from scratch cook. If dinner is the meal you're concentrating on, feel free to fill in the lunch cells with a dinners left overs. In your case, at the onset of the week decide which freezer meals you'll be eating on which day; put them on your meal plan chart. Then distribute the leftmovers in the dinner and lunch cells following; including any "reconstitutions" or use of the left overs as the base of another dish all together. When filling in about (before and after) a major cooking event, take a survey of the refrigerator and counter top perishables to consciously include them. Many, many people fill out thier menu plan every couple of days versus once per week or once per month.
Okay, Becky I have one for you. Could you do some freezer meals during the pantry challenge? Even if it’s just like 5-6 meals total, it would be so cool to see what you could come up with to stash in the freezer when you’re in a pinch!
Best thing I did this year was chop and freeze bags of onions. Then when I'm cooking and need onions I can just grab what I need. So quick and easy and then your onions don't go bad on you!
I love to watch you cook!! I like your commentary on rules being restricting. What about guiding principles instead of rules. That gives a connotation of moving forward instead of rules which hold you back.

Man I love all of the content. I learn so much. I just recently made my own bbq sauce, and I was inspired to do it because you make your own sauces like ketchup and pizza sauce. Mines not canned bbq sauce (don’t have enough/appropriate storage for much canned goods) but I just put the bbq sauce in a big ketchup bottle in the fridge! Keep going Becky!

Becky, rice maker is something that is rarely used in uk. Ive never seen one in electrical shops to buy. The best way to cook rice on stove is in my duch oven. Cover with water just couple inches over rice. Cover with lid, Bring the rice up to boil, when hot water to a rolling boil, turn down to low for 10 mins, turn off stove and leave for 10 mins. Done, the trick is to leave rice alone, dont stir and you will be left with soft fluffy rice. Taken me over 25yrs to finally get it perfect ever time.

I’m doing this as well with a twist, of course, lol. Pulling everything out of the pantry, taking an inventory and dating everything. Also using Canuary to can a lot of the dried beans as well as “fast beans” from RoseRedHomestead. So, canning and dehydrating are in the mix as well as shopping my pantry. No grocery trips with the exception of pet food, pint jars, etc. No food! Also, my try item is making my own oat milk…I have so many oats. 😂
HELPFUL HINT: Boil eggs for 7+ min in water with a dash of vinegar and salt. Rinse with cold water. Put an egg in a pint (or quart) mason jar. Swirl around gently about 3-4 times. Check to see if it needs to crack more. Don’t over swirl. Will easily peal.
Becky, you motivate me every day! Thanks for doing an almond flour recipe. Our son has Type 1 Diabetes and we rarely get to use regular flour because of high carb count and where he does have a baked item we use almond flour, way less carbs!
@@caithemburrow5569 wholesum yum has great stuff with the carb count (recipes with sugar substitutes like Swerve) and any keto recipe through google. My tip I tell family is: son has approx 50 points (points = carbohydrates - fibre) for a meal so learn nutrition labels! Make sure the dinner isn’t 100 points when you add a dessert. As you start to understand how many carbs are in foods it helps you figure out healthy meals for diabetics! Lots of lean meats and non starch veggies so you can have a small dessert. Hope that helps!
"fresh" dill in the winter = process dill fronds and freeze. Use from frozen. I store mine in a ziploc bag. They have such little moisture that the texture is the same. I love it on salads as it tastes nearly summer fresh.
In addition to your chicken salad mix, I add chopped apples and chopped walnuts to mine. I like to make mine the day before so it’s nice and cold, and the flavors marry. 🥰🥰
Almond flour is great as a breading for fish. Mix with garlic, salt and pepper and parsley. Egg wash the fish and dredge the fish in almond flour mixture. Pan fry the fish in just a little oil. I love it on steelhead.

That banana bread looked so perfect! Almond flour is just like fine almond meal so it doesn't absorb moisture. I usually add some cinnamon or oatmeal to help suck up the moisture when i make a similar pumpkin based bread.

I watched your video this morning after I woke then I got up to make morning tea (not coffee drinkers here) and as I was making tea and doing the morning kitchen chores I pulled out the items on the first shelf by the stove. Shelf by shelf as I drank my first cuppa I got that whole cupboard done. Now just 5 more and my gluten free shelf(I’m the only one in this house that’s gluten free) to clean and organize! The past few weeks we have had a cold snap and my bread was not rising either. I started putting it in the microwave (not turned on) overnight and now it rises BEAUTIFULLY.
Yes! The microwave is an excellent proofer - I find on especially cold days, I can microwave a cup of water for 2-3 minutes and the microwave stays warm for hours.

I get so excited every time you post! I think I'm addicted. 😂 In all seriousness, thank you for taking the time to make these videos, even though I'm sure it's difficult at times. I've learnt so much and I'm getting more excited about growing my own produce in the future to be more self sustainable and with cooking and preserving (at the moment I'm working on just keeping houseplants and herbs alive 😅). I'm doing the pantry challenge with my own rules where I look for the older stuff I've got in the pantry and try and include it in my cooking (or as a side) wherever possible to use it up. I'm trying to make 1 meal a week entirely with the things I have in the pantry. It's working well so far for us considering my husband and I live on 1 income. Excited to keep watching and read everyone's comments about how they're going with this pantry challenge. 😊

Just watched the video & wanted to give you a yummy suggestion for your leftover banana 🍌 bread. Slice it, put it in the toaster or toaster oven, get it nice & crispy, then put butter on top. It is SOOO delicious this way!

A trick I use to keep hard boiled eggs better in the refrigerator is to put a couple of paper towels in the bottom and up the sides of the lidded container you use to store the cooked eggs. This method keeps the eggs fresher longer.

I live in Lexington ky zone 6 b. Every year I over winter cold hardy lettuces, chard, kale with hoops and row covers. We just had 10” of snow and it’s totally fine. You could definitely do this in zone 8

You are a joy! I spoke to the tv when you talked about pickling your onions , Freeze dry them !!! You will love having them for recipes, topping a salad, mixing into tuna , egg salad or chicken salad. Add them to broth, soups , chowder! Powder them in a food processor/ blender and use them powdered in dressings sauces any recipe. Love freeze dried shallot too!

I'm only half way in and I just want to say you are awesome. I also wanted to let you know how I learned 2 of the things you did. One tip I learned about bread rising better as well as warmth is keep the salt away from the yeast. Mix it more into your flour after everything else. And the eggs I do for 4 min. In the insta pot. I'm going to have to try the banana bread recipe, my boyfriend is double allergic to gluten so we have a strict gluten free household and I have a whole bag of almond flour i havent touched. Thank you for sharing your meals throughout the week, I love watching everything you put out!
ROFLOL love the slow lip lick of your puppy dog as you ate the banana bread!Almond flour is good if you are reducing your gluten. I like mixing coconut flour and almond flour but they tend to need more liquid. Don’t overcook it as it tends to dry out. You made it perfectly

I said it on another video but I'm going to say it again. You inspire me to cook, and I HATE cooking. We're definitely going to try your no knead bread soon. I love homemade bread but I have rheumatoid arthritis in both hands and kneading is a no no for me. I don't have any fancy gadgets to knead for me so this sounds perfect. What an amazing job. Im doing the challenge also. Havent gone to the store for anything. I havent done this since my kids were young so Im curious how long we can go. Being a prepper and gardener I have always said 6 months worth of food is a safe bet in case things go South. We shall see lol
another way to break up your pasta is to roll it up in a towel and bend where you want the pasta to break. It doesn't go flying everywhere and all you have to do is open the towel over your pan and pour it in. I'm guessing your rice pilaf dish wasn't too spicy for Josh? It looked wonderful!
corn tortillas are super duper easy, you got this! The only learning curve I dealt with was getting them as thin as I wanted. And you can totally sub the lard/oil/whatever for bacon grease
I made your apple cinnamon baked oatmeal for the first time (sort of). I didn’t use apples (but next time I will) instead I used some mulled apple cider jelly that I made. Oh man!! It’s my new favorite breakfast and snack!! Thank you!!
That baked oatmeal looks so yummy! I may have to give that one a try for sure. Just gonna share, I do a combo of Ina Garden and Rachael Ray for cooking hard boiled eggs and I've never had a green egg since. Set your pan of eggs/water on the stove, slowly bring up to a boil, let them boil for about 1 1/2 min, then cover with a lid, shut off the heat and let them sit for 20 mins un-disturbed, as they finish cooking in the residuel heat in the water, and after 20 mins, drain, give the pan a slight shake to break the shells a little bit and then run under cold water. Chill/peel as you normally would.

Becky, you menu plan more than you think. When you cook a month's food for the freezer that's your way of menu planning, and very effective too!
I don't know if this is something you would do, or that all your audience would like to watch this, but I think your usual hairstyles are so fabulous! Could you do a video where you show us how you do some of your most commonly worn hairstyles?
I would suggest to prepare your masa earlier or even the day before and wrap in plastic wrap. This will allow the moisture to hydrate better and the result is a tortilla that doesn’t crack. I also add more water than on the instructions
Bread tip: you can use the instant pot on keep warm to let the bread rise when the kitchen is cold

Update: I've been cleaning out my fridge, cabinets since I first started watching your videos several weeks ago. It's been SO SATISFYING to go through these long neglected ingredients and incorporate them into delicious recipes! Thank you for the wonderful inspiration and encouraging my creativity in the kitchen! Your channel has truly been a blessing to me, in more ways than one.
Here are a few fun recipes/techniques I've made recently...
- Spaghetti squash chicken & kale Alfredo bake
- Black bean, mushroom and onion burgers
- Tortilla chips, from store bought tortillas. They were awesome!
- Carnitas, mushroom and tri-color refried bean burrito bowls (out of canned black beans)
- Coconut chicken curry over rice (made my own rice for the first time)
- Paleo brownies and banana nice cream
- Hotdog Philly over salad
- Quinoa noodle spaghetti
- Pan fried bacon (I've always made it in the microwave before)
Quinoa is great to throw into other dishes to just add some nutrition. I throw 1/2 cup of quinoa into each pot of soup, chili, oatmeal, spaghetti, lasagna (tomato sauce), fried rice, stir fry, etc. It's amazing how easy it is to add that extra "umph" of nutrition. I also throw some Chia seeds into lots of baked goods, like muffins, cake, brownies, etc., for the same reason.
Good ideas, I have a bag to burn up myself.
I cook it and throw it in salads. Love it.
Great idea to.add to other dishes for added nutrition. I'm going to start working my way through.the huge bag I have, my family all.complain about it but think they'll be up for having it added to other dishes.
@@beccihayward975 I wish you luck! My husband and I don't even notice it in most dishes, and in the ones that we do it's absolutely fine. I also heard about scattering already cooked quinoa on salads and putting it in chicken salad, egg salad, tuna salad, etc. I haven't tried it, but I probably will this summer.
So true. I love to put chia and sesame seeds in everything I can. Scrambled eggs with toasted sesame seeds are sooo good
In December my hubby broke his ankle. In January I slipped on the ice and broke my back. So…. February Pantry Challenge was started. Our first time! We are loving it! Forced us to go through and use up those unusual items that have taken up space. This is also helping us use our garden bounty that we worked so hard in canning in 2021. Your channel is super fun and I'm impressed with your energy level. Side note on yeast proofing - you need to mix the salt into the water until completely dissolved before adding the yeast. The granules will kill any yeast they come in contact with. The same goes for dry ingredients going into yeast, you should thoroughly mix in the salt first to avoid killing some of your yeast
No one better could appreciate the jewel of cast iron pots than you, Becky. So sweet of Josh to gift you something to encourage your craft. The Finex pans are gorgeous. Love to watch you spice your food. Nothing stingy about the way you do it. Pilaf looks delicious…will try it. Til next time.
I don’t know if you have ever tried it but to peel your eggs a little easier if you crack it just a little and then stick a spoon under the shell it almost peels it completely together, and it super quick.
Love watching Becky and when you say “Just add a little…”, cue huge big cups or spoons of whatever the ingredient is. Who would love to go to Becky’s and get a “small” slice of cake 🙋♀️

My Hubby gives me the eye squint & roll when he sees me put butter on anything. He doesn't like butter & I only use organice grass fed butter. I keep telling him this butter is sooo good for you & you can only get certain nutrients from butter, so it's a win win for me 😁👍.
I would love to find a good recipe for homemade cream cheese, I don't like all the unknown additives they're putting in Phillidelphia (sp?) Cream cheese these days. Our Publix supermarket hasn't had their organic Greenwise cream cheese for months now 😐.
He uses preserves on all his baked goods except for those that don't need anything extra on them 🙃

I like to lightly fry mine in a bit of butter... basically to warm through and toast the outside but allow the butter to coat both sides 🙊😁
Becky, I learned a tip from watching Mary's Nest on UA-cam. Turn on the light in your oven and place your dough in their to rise. It works like magic. This way you can make your no knead bread in just a few hours. I use this technique for all of my yeast breads. My kitchen is really cold in the winter even though we have central heating. I'm also doing the pantry challenge. I also order from Azure Standard. when i get any cheese i buy 2 - 5 lb. bricks, 1 I slice (I work at a restaurant) and shred the other. Last month I got pepperjack and cheddar. and i had left over cranberry sauce from Christmas so I made grilled cheese with pepperjack and cranberry sauce. Becky, I love your channel.

To ease into a weekly, menu plan begin with a 7 day (columns), 3 meal (3 rows) grid; I like a 4th short row at the bottom for comments, notes, and sometimes prep ahead todo's. Then concentrate on one meal of the day until you've got that one working for you meal chart wise; give yourself permission to fill in the other meals if its not a problem.
To begin, plan in 2 or 3 day increments using the 7 day chart; give yourself permission to dot additional meals for during the week and even begin the next week's 7 day chart early. Or, plan 2 to 3 major cooking events seperated by blanks during the 7 day chart. Then fill in the blanks using the left overs, or making multiple meals from a single, from scratch cook. If dinner is the meal you're concentrating on, feel free to fill in the lunch cells with a dinners left overs. In your case, at the onset of the week decide which freezer meals you'll be eating on which day; put them on your meal plan chart. Then distribute the leftmovers in the dinner and lunch cells following; including any "reconstitutions" or use of the left overs as the base of another dish all together. When filling in about (before and after) a major cooking event, take a survey of the refrigerator and counter top perishables to consciously include them. Many, many people fill out thier menu plan every couple of days versus once per week or once per month.
Okay, Becky I have one for you. Could you do some freezer meals during the pantry challenge? Even if it’s just like 5-6 meals total, it would be so cool to see what you could come up with to stash in the freezer when you’re in a pinch!
Best thing I did this year was chop and freeze bags of onions. Then when I'm cooking and need onions I can just grab what I need. So quick and easy and then your onions don't go bad on you!
I love to watch you cook!! I like your commentary on rules being restricting. What about guiding principles instead of rules. That gives a connotation of moving forward instead of rules which hold you back.

Man I love all of the content. I learn so much. I just recently made my own bbq sauce, and I was inspired to do it because you make your own sauces like ketchup and pizza sauce. Mines not canned bbq sauce (don’t have enough/appropriate storage for much canned goods) but I just put the bbq sauce in a big ketchup bottle in the fridge! Keep going Becky!

Becky, rice maker is something that is rarely used in uk. Ive never seen one in electrical shops to buy. The best way to cook rice on stove is in my duch oven. Cover with water just couple inches over rice. Cover with lid, Bring the rice up to boil, when hot water to a rolling boil, turn down to low for 10 mins, turn off stove and leave for 10 mins. Done, the trick is to leave rice alone, dont stir and you will be left with soft fluffy rice. Taken me over 25yrs to finally get it perfect ever time.

I’m doing this as well with a twist, of course, lol. Pulling everything out of the pantry, taking an inventory and dating everything. Also using Canuary to can a lot of the dried beans as well as “fast beans” from RoseRedHomestead. So, canning and dehydrating are in the mix as well as shopping my pantry. No grocery trips with the exception of pet food, pint jars, etc. No food! Also, my try item is making my own oat milk…I have so many oats. 😂
HELPFUL HINT: Boil eggs for 7+ min in water with a dash of vinegar and salt. Rinse with cold water. Put an egg in a pint (or quart) mason jar. Swirl around gently about 3-4 times. Check to see if it needs to crack more. Don’t over swirl. Will easily peal.
Becky, you motivate me every day! Thanks for doing an almond flour recipe. Our son has Type 1 Diabetes and we rarely get to use regular flour because of high carb count and where he does have a baked item we use almond flour, way less carbs!
My dad is diabetic. Do you have any recommendations for recipes or websites?
@@caithemburrow5569 wholesum yum has great stuff with the carb count (recipes with sugar substitutes like Swerve) and any keto recipe through google. My tip I tell family is: son has approx 50 points (points = carbohydrates - fibre) for a meal so learn nutrition labels! Make sure the dinner isn’t 100 points when you add a dessert. As you start to understand how many carbs are in foods it helps you figure out healthy meals for diabetics! Lots of lean meats and non starch veggies so you can have a small dessert. Hope that helps!
"fresh" dill in the winter = process dill fronds and freeze. Use from frozen. I store mine in a ziploc bag. They have such little moisture that the texture is the same. I love it on salads as it tastes nearly summer fresh.
In addition to your chicken salad mix, I add chopped apples and chopped walnuts to mine. I like to make mine the day before so it’s nice and cold, and the flavors marry. 🥰🥰
Almond flour is great as a breading for fish. Mix with garlic, salt and pepper and parsley. Egg wash the fish and dredge the fish in almond flour mixture. Pan fry the fish in just a little oil. I love it on steelhead.

That banana bread looked so perfect! Almond flour is just like fine almond meal so it doesn't absorb moisture. I usually add some cinnamon or oatmeal to help suck up the moisture when i make a similar pumpkin based bread.

The past few weeks we have had a cold snap and my bread was not rising either. I started putting it in the microwave (not turned on) overnight and now it rises BEAUTIFULLY.
Yes! The microwave is an excellent proofer - I find on especially cold days, I can microwave a cup of water for 2-3 minutes and the microwave stays warm for hours.
ooooo good idea! we keep our house pretty cool. I will try this.
You can also try turning the stovetop light on if your microwave is above the stove to make it a little warmer.
I do mine in the closed but turned off oven, but with the light on inside!
I put mine in my dehydrator

I get so excited every time you post! I think I'm addicted. 😂 In all seriousness, thank you for taking the time to make these videos, even though I'm sure it's difficult at times. I've learnt so much and I'm getting more excited about growing my own produce in the future to be more self sustainable and with cooking and preserving (at the moment I'm working on just keeping houseplants and herbs alive 😅). I'm doing the pantry challenge with my own rules where I look for the older stuff I've got in the pantry and try and include it in my cooking (or as a side) wherever possible to use it up. I'm trying to make 1 meal a week entirely with the things I have in the pantry. It's working well so far for us considering my husband and I live on 1 income. Excited to keep watching and read everyone's comments about how they're going with this pantry challenge. 😊

OMG, rice on stovetop my entire 60 years! Boil Double liquid to rice, cover & simmer low for 20 minutes with no looking or stirring. I loved this video. Packed with fun ideas! You are rocking the start of the pantry challenge.
Almond meal/flour makes a great breading for chicken. I mix it with Parmesan shaker cheese, and spices lightly fry in coconut oil.

Just watched the video & wanted to give you a yummy suggestion for your leftover banana 🍌 bread. Slice it, put it in the toaster or toaster oven, get it nice & crispy, then put butter on top. It is SOOO delicious this way!

A trick I use to keep hard boiled eggs better in the refrigerator is to put a couple of paper towels in the bottom and up the sides of the lidded container you use to store the cooked eggs. This method keeps the eggs fresher longer.

I live in Lexington ky zone 6 b. Every year I over winter cold hardy lettuces, chard, kale with hoops and row covers. We just had 10” of snow and it’s totally fine. You could definitely do this in zone 8

You are a joy! I spoke to the tv when you talked about pickling your onions , Freeze dry them !!! You will love having them for recipes, topping a salad, mixing into tuna , egg salad or chicken salad. Add them to broth, soups , chowder! Powder them in a food processor/ blender and use them powdered in dressings sauces any recipe. Love freeze dried shallot too!

I'm only half way in and I just want to say you are awesome. I also wanted to let you know how I learned 2 of the things you did. One tip I learned about bread rising better as well as warmth is keep the salt away from the yeast. Mix it more into your flour after everything else. And the eggs I do for 4 min. In the insta pot. ROFLOL love the slow lip lick of your puppy dog as you ate the banana bread!Almond flour is good if you are reducing your gluten. I like mixing coconut flour and almond flour but they tend to need more liquid. Don’t overcook it as it tends to dry out. You made it perfectly

I said it on another video but I'm going to say it again. You inspire me to cook, and I HATE cooking. We're definitely going to try your no knead bread soon. I love homemade bread but I have rheumatoid arthritis in both hands and kneading is a no no for me. I don't have any fancy gadgets to knead for me so this sounds perfect. What an amazing job. Im doing the challenge also. Havent gone to the store for anything. I havent done this since my kids were young so Im curious how long we can go. Being a prepper and gardener I have always said 6 months worth of food is a safe bet in case things go South. We shall see lol

another way to break up your pasta is to roll it up in a towel and bend where you want the pasta to break. It doesn't go flying everywhere and all you have to do is open the towel over your pan and pour it in. I'm guessing your rice pilaf dish wasn't too spicy for Josh? It looked wonderful!

corn tortillas are super duper easy, you got this! The only learning curve I dealt with was getting them as thin as I wanted. And you can totally sub the lard/oil/whatever for bacon grease
I made your apple cinnamon baked oatmeal for the first time (sort of). I didn’t use apples (but next time I will) instead I used some mulled apple cider jelly that I made. Oh man!! It’s my new favorite breakfast and snack!! Thank you!!
That baked oatmeal looks so yummy! I may have to give that one a try for sure. Just gonna share, I do a combo of Ina Garden and Rachael Ray for cooking hard boiled eggs and I've never had a green egg since. Set your pan of eggs/water on the stove, slowly bring up to a boil, let them boil for about 1 1/2 min, then cover with a lid, shut off the heat and let them sit for 20 mins un-disturbed, as they finish cooking in the residuel heat in the water, and after 20 mins, drain, give the pan a slight shake to break the shells a little bit and then run under cold water. Chill/peel as you normally would.
Yep that is how I do mine. Works every time.

I’m trying to use up those miscellaneous ingredients in the kitchen AND although I’m not doing this pantry challenge I have decided to make a more conscious effort to limit my grocery shopping to once a month. And I do have almond flour to use up so that banana bread recipe sounds perfect!! I’m going to whip it up now. Thanks!!
