hi,umalsa po ba ang dough? if hindi po it means dead po ang yeast. if umalsa naman po then nagiging tough sya after you knead, sign na po un ng over kneading. I would suggest po if ok nman ang yeast nyo then try to knead the dough kahit for 5mins only para maavoid lang po ung over kneading regardless of the windowpane/elasticity then proceed npo sa proofing. you can msg me po on my FB page to guide you further.
