Hey! Thanks for the video! I was looking into how to carve mushrooms to incorporate them in my designs. Coming from a carpentry background when cutting into endgrain it often helps to dampen the wood. This helps not to rip out the fibers.
I created a template and used a band saw to cut the blanks but I used a regular coping saw for many years, I still go to the hand tools more often as I find the control on them better 😊
The easiest way would be to make a blank cutout by sawing the rough shape from the wood you have. If you trace the shape of the mushroom onto the wood then carefully saw away the parts you don’t need, you’ll be left with the shape I start with in the video. Hope that helps! 😊😊🙏

I did it from a cuboid piece of wood
I never think of woodgrain
