I've made them with chopped dates instead of the choc. chips, adding orange peel powder, with carob chips, and with additional nuts/seeds. Just made these and they are so delicious! My kids loved them too! They are fluffy, yet filling, perfectly sweet and chocolaty, and the flavor is amazing! I’m going to make these again this weekend for a park meet up with friends. I am sure they will be a hit! Thank you for a great recipe that will be a staple in our home. 💚
Great question, Janet! Thanks for asking. First, let me reassure you that if it's entirely the flavor of coconut that's giving you hesitation, you don't taste it at all, so you may be OK with the recipe as written. The reason it's there is because it's a higher-fat ingredient, so it helps keep the muffins moist (in place of the fat from oil or an egg like a traditional muffin recipe would have). But if you really want to replace it, I'd recommend choosing another higher-fat ingredient, such as a nut butter (almond butter would be a nice choice) or a homemade cashew cream (soak raw cashews to soften them, and then once they're soft, drain them and blend with just a little bit of water until smooth). If you opt for the nut butter, then you'll almost definitely need to also add more almond milk to the batter, since it won't be as liquid that way, to achieve the batter consistency we're going for.
