Also Caribbean-style sofrito uses Scotch bonnets, cilantro and culantro ( yes they are different fresh herbs culantro is flat and longer leaf), garlic, onions and salt. I think the similar dish in Puerto Rico is puerco sancuchado, it's delicious. Also some of the same ingredients in Pasteles! I want to try this recipe...

Thanks Gina for your recipes, your husband must be a very happy man: however hopefully I am wrong in this observation; in your video you was using a metal fork in a Teflon coated pan, and from school we learned that simple mistake can have lasting unfortunate serious negative health consequences; please take future precautions and please inform your numerous subscribers that you cannot use a metal utensil in a Teflon coated pan because you will strip the coating and include the strippings in your food....take care and GOD bless you
