    Soffito is the same thing as epis. You can buy Goya sofrito in Walmart. Ethnic section. Spanish

      Spanish sofrito didn't usually use cloves and allspice. Also Caribbean-style sofrito uses Scotch bonnets, cilantro and culantro ( yes they are different fresh herbs culantro is flat and longer leaf), garlic, onions and salt. I think the similar dish in Puerto Rico is puerco sancuchado, it's delicious. Also some of the same ingredients in Pasteles! I want to try this recipe...

    I think they cook more evenly sliced slanted but still have some thickness but not too much

    Gina, you and me both. I had only used dried parsley which has no taste, lol . I bought flat-leaf parsley & was surprised by how much flavor it had. I found myself not caring for the taste of it. Once cooked, it mellowed though and i was able to use it. :)

    Mrs Gina I know that I can look up the answer to the questions I ask you on the internet somewhere but I love talking and communicating with people. I always have and I always will 😊. With that being said, what is the difference between pigeon peas and just regular sweet peas or baby sweet peas? Would regular peas change the recipe a whole lot?

    Thanks Gina for your recipes, your husband must be a very happy man: however hopefully I am wrong in this observation; in your video you was using a metal fork in a Teflon coated pan, and from school we learned that simple mistake can have lasting unfortunate serious negative health consequences; please take future precautions and please inform your numerous subscribers that you cannot use a metal utensil in a Teflon coated pan because you will strip the coating and include the strippings in your food....take care and GOD bless you

      I’m Haitian and that pork broth ... SO MUCH FLAVOR. Sometimes we eat it with boiled plantain or potatoes. (We’re country Haitians tho 🤷🏾‍♀️)
