That's a nice question. Well, corn flour, corn starch and masa all 3 different but similar ingredients. Corn flour has an earthy, sweet taste similar to corn while on the other hand corn starch is flavorless, it adds texture rather than taste to the dishes. Masa is the perfect ingredient for tortillas and corn flour is better for fried food. So in our case for the Loukoumades we use corn flour to add some taste and because we are frying them. Hope I could be of assistance.
