    John huffing a rum cake is quite preppy. This cake freezes beautifully - the second round of glaze will bring the thawed cake back to the land of the living, and no one will be the wiser. My grandmother's recipe called for finely chopped walnuts sprinkled in the bottom of the pan before adding the cake batter, and it was always a winner. Thanks, John, for all that you do for your community. Cheers!

    I love a caramelized crust, so I butter the pan thoroughly and then shake super fine sugar throughout and it gives it a wonderful crust.

    It's so good to see a rum cake not using a packet mix! Which is very typical in the US. I will definitely try this recipe in the near future and give my thoughts.

    I went to the Cayman Islands and have been obsessed w rum cakes ever since. I developed a recipe and have been using it to make variations. Everybody’s favorite so far is pineapple, can’t wait to try it with this recipe!

    This cake looks wonderful! When I butter and flour a Bundt, I put the prepped Bundt in the fridge so the butter doesn’t pool. This also allows me to prepare the pan before mixing it batter.

    I use the homemade goop to coat my Bundt and cake pans, it’s equal parts of flour, oil and crisco, mix it all together and keep it in a jar in my pantry. When baking a cake I just brush it in the pan with a pastry brush

    Excellent interpretation of a Caribbean classic! I grew up eating fully soaked rum cake ( as do all Caribbean kids, lol). Typically a couple of bottles are used since it's usually made for holidays and a lot of the alcohol bakes out in the hot oven. But I will definitely pass on your rum glaze idea!!

    Great timing! I’ve been making the same rum cake since 1972 and in recent years have fled the prepackaged/processed ingredients approach in most things (cake mix & pudding mix in this case). My brother made a special request so I gave in and made him the old version 😖. Boy oh boy I could taste and smell those ‘chemicals’. Thank you for sharing!! Gotta have that glaze!! Yum 🥰. PS - I always cover with cling wrap and let it “sit” for three days before serving).

    My Grandmom's friend used to make a whisky cake that was a lot like your rum cake. I definitely want to try your recipe, both with dark rum and with whisky.

    I bake rum cake every year for Christmas. Normally, I brown the butter while steeping a cinnamon stick in it. A little hit of spice and the nuttiness just add an extra oomph of flavor. Typically, I use all purpose, but I'm certainly taking notes to use cake flour now.

    I now use a technique found in one of my recipes: give the cake 10 minutes in the pan, inverted it, pour the syrup into the pan and return the cake to the pan! Really soaks in!

    I use a fairly stiff bristled pastry brush and soft butter or margarine to grease a Bundt pan. It gets in all the ridges. Then dust with flour.

    I made a Rum Cakevyears ago from Bicardi Rum that used Yellow Cake Mix. It was absolutely delicious, but this has to be so much better. Will try.

    Soak cake with a fifth of rum! Nothing else needed. Needle injection or prick with a fork. Cover tightly, better the next day. Keeps forever, or until eaten, which ever comes first. 😊Freezes beautifully.

      I've had luck with All Purpose flour but that's for someone in the UK.

    Rum cake is one of my favorites! This southern boy thinks that pecans on top are essential. I always add an extra quarter cup of rum after the sauce is cooked because I like that taste of raw rum. You really do want a big dollop of whip cream with it though to cut that slight burn.
    WARNING: I think it's Bacardi that makes an Extra Dark rum. In this case darker is not better! Just not at all the right flavor note, IMO.
