- In Today's video Jill bakes a 1940's recipe for Scalloped Peaches. The recipe appears in the 1940's cookbook "Women's Home Companion Cookbook." The recipe is listed down below.
Scalloped Peaches
Page 249, Women’s Companion Cookbook
2 cups dry breadcrumbs
½ cup butter, melted
3 cups peaches (peeled and sliced) (I’d increase to 4 cups)
½ cup brown sugar
1 teaspoon cinnamon
½ cup water**
Combine the breadcrumbs and melted butter, so the breadcrumbs are well coated.
Arrange buttered crumbs and peaches in layers in casserole dish, sprinkling each layer of peaches with a little of the brown sugar and cinnamon. The top layer should be breadcrumbs.
**Pour water over all. (I’d delete the water from this recipe)
Cover and Bake at 400 F, about 30 minutes. Remove cover during last 15 minutes.

To peel them faster put them in cold water after boiling. The topping I used was oats, flour, butter and brown sugar using a fork. Did add blueberries with the peaches.

You're so lucky to have your Mom's vintage cookbook.
I think that "breadcrumbs" is not today's cannister dried ones. *I believe it's referring to leftover bread that's cubed.
If you're so inclined, I would try again (oven toast on a sheet pan first for best results). I bet you will love the outcome, partially if you're lucky enough to get those beautiful peaches again.

Hi! Your comment about the bread crumbs vs. bread cubes made me curious so I went investigating the cookbook's meaning of "crumbs. " The book does mean crumbs. Not cubes. However, if I did make this recipe again, I definitely would try bread cubes. Thanks for the suggestion

I just made a peach cobbler somewhat similar to this but using flour mixture for the crusty part. Bread crumbs are a very unique ingredient that I’d never have thought of using, but makes sense. Made me wonder what bread crumbs were like in the 40s. Did they have them in the grocery or did they make them from actual bread on hand? I have no idea. Glad you tried the recipe.

I made a peach cobbler today, using the Red Haven peaches we picked this afternoon. They are freestone - lovely! Just cut and twist, pull the pit out and they were ready to slice.
