Delicious Carrot , Raisin & Nut Bread | Plant-Based

  • In today's video, Jill teaches you how to make a plant-based carrot, nut, and raisin loaf. It's moist and delicious! You'll find the recipe down below.
    Jill’s Carrot, Walnut and Raisin Bread
    Preheat Oven: 350 degrees F
    Grease an approximate size 8” x 5” loaf pan. I use a parchment paper sling to help remove the baked bread easier.
    In a Large Sized Bowl combine:
    1 ½ cup all-purpose flour
    2 teaspoons baking powder
    ¾ teaspoon baking soda
    2 teaspoon cinnamon
    ¼ teaspoon salt
    In a Medium Size Bowl combine:
    ¾ cup sugar
    2 flax eggs (2 tablespoons flax meal and 5 tablespoons water)
    1 ½ teaspoon vanilla
    ½ cup margarine, melted and cooled (I use Earth Balance sticks)
    ½ cup plant-based milk
    1 tablespoon white vinegar
    2 cups shredded carrots
    ½ cup raisins
    ½ cup chopped walnuts
    Instructions:
    Add the water to the flax meal. Mix well and set aside for approximately 10 minutes.
    Add the white vinegar to the milk. Stir and set aside for approximately 10 minutes
    Mix dry ingredients together. Set aside.
    Combine sugar, flax “eggs”, vanilla, milk and butter. Mix well.
    Add the wet mixture to the dry mixture. Combine but don’t over-beat.
    Next, add carrots, walnuts, and raisins to the mixture. Gently fold until the carrots, nuts, and raisins are well distributed.
    Bake at 350 for 40-60 minutes. (mine too approximately 45 minutes)
    Let cool about 15 minutes. Release bread from pan and cool on a rack.

    Do I add vinegar even if it is regular milk?

      The vinegar will give the buttermilk like quality than regular milk. I think you could leave the vinegar out without a huge difference when finished
