Let's Bake a 1940's Sally Lunn

- In today’s video Jill shows you how to bake a 1940’s Sally Lunn. The recipe comes from the Women’s Home Companion Cookbook. This is a very easy recipe. If you’re a new baker, or a seasoned baker looking for a new and interesting recipe, this one you'll really like. It’s a super light, flavorful cake with a crumbly, crunchy, buttery topping. Serve hot and enjoy!
SALLY LUNN, JULY, 2023
CAKE INGREDIENTS
2 CUPS FLOUR
3 TEASPOONS BAKING POWDER
¾ TEASPOON SALT
1/3 SHORTENING (I USED AVOCADO OIL)
1/3 CUP GRANULATED SUGAR
1 EGG
2/3 CUP MILK
TOPPING
½ CUP BROWN SUGAR
1 TEASPOON CINNAMON
1 TABLESPOON MELTED BUTTER
COMBINE BROWN SUGAR AND CINNAMON. BLEND WITH BUTTER. SET ASIDE
PREHEAT OVEN TO 400 DEGREES F. GREASE AN 8” X 8” SQUARE PAN, OR ONE OF A SIMILAR SIZE (A ROUND CAKE PAN WOULD WORK)
MIX FLOUR, BAKING POWDER, AND SALT TOGETHER. SET ASIDE.
COMBINE OIL AND SUGAR. BEAT TOGETHER WELL WITH A HAND MIXER, OR BY HAND WITH A SPOON. ADD EGG AND MIX WELL. ADD THE MILK. MIX AGAIN UNTIL ALL INGREDIENTS ARE WELL COMBINED.
ADD THE FLOUR MIXTURE AND STIR JUST ENOUGH TO MOISTEN THE DRY INGREDIENTS. DO NOT BEAT.
TURN INTO THE GREASED PAN.
SPRINKLE THE BROWN SUGAR TOPPING OVER THE BATTER.
BAKE FOR ABOUT 20 MINUTES UNTIL DONE. HOW DO YOU TELL IF A CAKE IS DONE? DO THE TOOTHPICK TEST.
CUT INTO SQUARES, SERVE HOT.
TOOTHPICK TEST: USE A TOOTHPICK AND POKE IT INTO THE CENTER OF THE BAKED CAKE. IF THE TOOTHPICK COMES OUT FREE OF BATTER, THE CAKE IS DONE AND CAN BE REMOVED FROM OVEN. IF THE TOOTHPICK COMES OUT WITH WET BATTER ON IT, PLACE THE CAKE BACK IN OVEN AND BAKE FOR ANOTHER 2-3 MINUTES OR UNTIL THE TOOTHPICK COMES OUT OF THE CAKE CLEAN.

What a surprise for me! This Sally Lunn is nothing like the one I grew up with in New Zealand. Ours was a plain sweetened dough with raisins or sultanas, pink icing with dessicated coconut thickly sprinkled. What a sea change, but the name was kept, and a bit of the history. Always interesting to see how recipes travel.

I've never heard of this, very interesting history also. It looks really good. It reminds me when my mother would have a neighbor over every so often for coffee and cake in the morning for some social time, I suppose after sending their kids off to school. I was probably 4 or 5 at the time.

My Mother used to make Sally Lunn when I was young. She never put a sweet topping on top and it looked more like a spoon bread.
Hi! When I was looking up this recipe in my mom's cookbook, there several versions. Some had yeast, so it was more like a bread. Others were similar to your mom's spoon bread style.

Lard is fat from cows or pigs. Shortening is a vegetable oil that is solidified with different chemicals so it looks and acts like lard
Did you miss the vanilla?
Hi Roxey -- no, I didn't feel like it was missing vanilla. It is such a tasty cake. If I was to use it for a cake that I frosted I'd probably add 1 tsp of vanilla. And, I will most definitely bake this again without the topping and frost it with chocolate frosting.
