    I gave this recipe a try for the holiday weekend. It is one of the best Vegan meatloaf recipes I have tried. Thanks for sharing.

    Thank you Kathy! I've made so many versions of vegan meatloaf and they are coming out 'gummy' and 'pasty'. As you stated, the key seems to be to have really well rinsed/dried cooked lentils. I'm making it for my and one other family member's Christmas dinner while others are eating beef 😞. Thanks so much!

      You are so welcome! The other tricks are avoiding over-pulsing it and allowing it to set up before cutting it. Have a Merry Christmas. I spent many years making two completely different meals. I get it.

    I'm really excited I found your site. My moms meatloaf is one of my all time favorites and now that I'm really trying hard to stay away from meat it's tough not eating some.

    Say stalks if you want to (celery) because that's what we all grew up calling it. I see it called out that way in all the old cookbooks.

    This looks wonderful and easier to make than the one I have Made. I need to go to Trader Joe ‘s but it is 1 hour each way.
    I do not eat bread. Will extra oats work?

      Yes, extra oats will work. You can also make your own lentils instead of using premade ones. Just make sure they are drained and dry.

    I'm going pescatarian this new years and I definitely am interested to see more of what you have in mind. I think you would do well by getting a cheap microphone for your videos though. the echo got to me a little bit. Keep it up!

      I do have a microphone. Our house has an open floor plane with all tile. Maybe I need a rug :)

    Hmmmm - interesting. Yeah, that loaf looked a little dry going into the loaf pan. But what sold me was you said your husband liked it. So, for that reason, I'm going to try making this version.

    What can i use to substitute the mushroom?

      If you are allergic to mushrooms, round tempeh is a great substitute. If you don't like mushrooms, it doesn't taste anything like mushrooms, so you may want to try it as is.

      Yes, or you can make, bake, and reheat. It's delicious cold as a sandwich after it is cooked the next day.

      It is very moist. Give it a try! It's excellent as a cold sandwich too!
