Hmmmm - interesting. Yeah, that loaf looked a little dry going into the loaf pan. But what sold me was you said your husband liked it. So, for that reason, I'm going to try making this version.
If you are allergic to mushrooms, round tempeh is a great substitute. If you don't like mushrooms, it doesn't taste anything like mushrooms, so you may want to try it as is.

Yes, extra oats will work. You can also make your own lentils instead of using premade ones. Just make sure they are drained and dry.

Yes, or you can make, bake, and reheat. It's delicious cold as a sandwich after it is cooked the next day.
