The best time of year to visit Ethiopia is from September to January because it marks the end of the rainy season and the start of the sunny season. If you come in September, you will have the chance to celebrate the Ethiopian New Year and the 'Meskel celebration,' an amazing and colorful festival. Additionally, if you arrive in January, you will witness the 'Timket celebration.'

I’m currently in Naples, FL with no Ethiopian food in the area so you got me salivating a bit and good video. Only suggestion for whenever you visit Addis Ababa or another restaurant, we don’t typically lick our fingers when eating, especially when sharing a dish like this, just fyi for a bit of cultural nuances; but that’s mostly within the Christian population not necessarily with Muslims.
Also, if the country settles down with all the civil unrest, check out iconic places like Lalibela in addition to the hyena feeding spot located in Harar.
    All the best, with love!
