Oh, I forgot to mention, humans can't digest whole flax seeds, so make sure you chew them good. Real good. People without teeth should avoid these.

I have made these several times now and recently had a massive Flaxseed sale at my store where I got 7 LBS for about $7 and got slightly drunk and made about half of that into crackers (9 batches) and can say many things. One: The Cyane is just the start, these things can take being spicy, the odd texture also dictates the spice is rather evenly distributed. Two these also love Ginger, Nutmeg, and Cargomom top this with Brie and now you won best Christmas dish (No seriously I did that) three f*** uniformity bake as a slab crack it to bit all it rustic

A slower but more healthful way to make this would be to use a dehydrator instead of an oven set at 115 degrees or so (under 118) to keep the seeds "raw" and "alive". Also make sure the flax seeds you buy are unprocessed (unheated).

Have made these twice using parchment paper. Requires turning the entire paper with seeds over for the final 20 minutes of baking to completely dry the bottom. Otherwise the stick and retain moisture. Also, I've found the leaving the finished flackers uncovered keeps them crisp. Putting them in a sealed container makes them flimsy again.
