    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989.     It's fun to watch these sort of videos. I'm only a home cook, but I'm always picking up new recipes and tweaking them to suit my own tastes. Sometimes the very best dishes come from taking a well used recipe and adding your own touches to it!

    She took me to a local hitachi place.
    I'd never been to one before.
    After enjoying the yum yum sauce I knew I had to hit up UA-cam university to try & find out how to make er. Glad I found this video, & THANK-YOU for sharing it with us!

    Yes! Most restaurants that make their own sauces make them in advance meaning the resting time bring out all the flavors! Looks delicious!! Thanks for the idea though! 💕

    Tomato paste taste better than ketchup just my opinion, I’ve tried both, the tomato paste is where it’s at. Let it sit in the fridge overnight and it taste miles better than it did when prepared. Good video!

    Benihana Yum Yum Sauce
    1 cup Dukes mayonnaise or Japanese mayonnaise
    1 tbs ketchup
    1-1/2 tsp rice vinegar
    1 tbs mirin
    1 tsp garlic powder
    1/2 tsp paprika
    2 tbs water
    Wisk until smooth
    Option: add 50% more of each paprika, garlic powder, and ketchup.

    I made it similar so thank you so much for this recipe & it was absolutely fantastic, the best I’ve made at home by far!!! (Sorry I’m not good at measuring I taste as I go so I add little at a time of everything) I did this with mayo , paprika , ketchup, sugar, lots of garlic powder, a tiny bit of cayenne, TINY splash of mirin, rice vinegar & sesame oil, with a little salt & a little water & now it’s sitting overnight but mmmmm even now it’s so good. I think the sesame oil is the trick!!

    I have just found out that Benihana no longer has this sauce on their menu and it has been replaced with a DISGUSTING HOT MUSTARD sauce....so thank you for this video!!!

    Made it! Taste good, nothing out of this world. Also I’ve never tried the yum yum sauce myself so I’m making it just cos I had all those ingredients on hand. Will let it rest and see how it “ blooms”

    Duke’s mayonnaise is definitely the best American made mayo. It’s a staple here in the South.

      Ray D. They are the same. Dukes has a more tangy taste, and Hellmans is smoother tasting. I did a taste test tonight.

      Right. At the very least they should have let the dry ingredients hydrate in the water and then mix it all together.

      This is exactly what I was gonna post. While I agree w/ them about doubling the other ingredients, and myself I add a bit of coarse ground black pepper and a teeny dash of fish sauce, I let mine sit at least a day before I use it and it always tastes much better.

      @@dewayneeller It's a strong flavor and easy to go overboard with, but the umami and salt is a nice counterpoint to the sugar from the ketchup.

      Very true. So In our hibachi place. We make sauce about 20-25 gallons at a time. When we get down to our last 10 gallons we start making more to allow to rest at least 1 night.

    North Bay Village. I went to the old one there since it opened and haven't been back to try the new one since moving to Ft. Myers in1984 but it was great then. I'm sure it's great now. Next time over there I think I'll go give it another try and enjoy their good food. I always enjoyed everything they had in the menu. This guy knows his profession. A real master with a knife!

    When I make this if it taste anything like the Japanese restaurant I will most certainly sub ! I've been looking for a good recipe for years. I even offered to buy a recipe from a restaurant ...no luck ,but this gives me high hopes.

    You can get Kewpie Mayo online. Hellman's and other has a totally different flavour to Japanese mayo. :)

      @@vengefulspirit99 Well, i will have to check that. But as i don't use heaps of it on a plate or everyday, i won't let that worry me. To me it wasn't sweet, it tasted as if more egg yolks are used, slightly peppery and it also had a apple cider vinegar flavour in there too.

      @@vengefulspirit99 Checked and Good news it has NO sugar. Kewpie is a little different than American mayo, because it's made with only egg yolks-not whole eggs-and with rice or apple vinegar and no added salt or sugar. Plus, i have better taste buds than i thought. :)

      The Japanese Mayo is the Kewpie which is at Costco sometimes! It is more yellow because is yolk only, no egg whites= richer taste.

    I was raised on Hellman's all of my life and now at 50 years old, Duke's is the way to go.

      Hellman's changed it's recipe a few years back. They tinkered with the ratio of egg/egg yoke and lemon concentrate

      Not to me. Dukes is very big here in VA, but it's still too sweet. JFG mayo, made in Knoxville is also big around here, but also has more sugar than I like. American made mayonnaises are made to appeal to the American tastes, which mean they're all over sweetened, and the #1 reason Americans tend to be so obese. I hate sweet condiments. Hellman's might be a bit less rich, but it has less sugar than Dukes or JFG, and thus to me it tastes fresher. And ketchup, which also typically contains way too much sugar, ought to be substituted with tomato paste in the Yum Yum Sauce. I will agree though, that Benihana makes the best Yum Yum Sauce, it's definitely less sweet than any of the other big Japanese steak house chains' versions of it.

    The Kewpie Mayo is unbeatable. Only if you make your own Mayo.
    1 egg yolk, 1 fermented soya eggyolk, 240 ml sunflower oil, 1o ml sesame oil, 1/2 ts mustard, 1/8 juice of lime plus zest, 1/2 ts of smoked salt, 1/8 ts of white pepper. If you like you can add also a few drops of fish sauce - put all in a hand-held blender and dip it with everything you want. Perfect for Tuna rolls.

    This stuff always tasted like Burger King to me. It's so distinct lol. I like it, I don't like BK that much anymore but the flavor of the sauce is excellent.

    I just got my first bottle of Kewpie from Amazon. I find it delicious and rich, but there is something in the finish that I’m not certain I like, although I can’t put my finger on it. That aftertaste reminds me of Miracle Whip (which I despise), although Kewpie is not similar to MW in any other way. I did use it in a siracha aioli I made yesterday for crab cakes and it was spectacular. Not sure yet if I am ready for a big dose of it in something like egg salad. I might definitely like it in a yum yum sauce - will be trying this.

      Beach Blond the basic difference is one uses only egg whites and one uses the yolk too. Forget which was which though.

    Hi Chef Hiro San, during the tasting part of the video I noticed you were very quiet and looked like you were deep in thought analyzing the different tastes. I was wondering what your thoughts were on the different sauces? I also was wondering why Benihana’s was more yellow than the others, could it be they add something else like turmeric to get that color? 🤔 Thank you for this, I am definitely saving this video so I can try it. I’ve never been to Benihana in my life.

      The mayonnaise that they used was more yellow, and once the ingredients rest for hours, the colors changed.

    When I was in Japan, many years ago, in Fukuoka, once -in-a-while, I'd go to Chinese restaurant named Leuho. We would order "Champon". Are you familiar with such a dish? We couldn't make up our minds whether it was a meal or a soup in a large bowl.

    I use sautéed fresh garlic , sugar, mayonnaise, red paprika powder, ketchup and don’t forget BUTTER, don’t use vinegar or mirin because ketchup it’s enough :) and you can add lychee to make more tasty

    Always love your videos Hiro. Replace garlic powder with a few cloves of roasted and pureed garlic, add some fresh grated ginger for a yummier yum yum that will beat them all. I also think a small shot of sriracha or sambal oelek never hurts. Would love to see you guys do a collab with the Gale Force Twins since i'm sure they'd put you on to fresh fish we'd all love to see you prepare.

    There are 7 kinds of Kewpie mayo that I know of and a couple cheaper knock-offs as well such as QP mayo. The Japanese Kewpie has a red top on the gallon jug (and a red wrapper on the plastic squeeze bottle.) It is made with egg yolks and not whole eggs. The American version (in a white topped jug or yellow wrapped squeeze bottle) is made with whole eggs like American mayo is made. There is also a low fat version of both of these, labeled 1/2 calorie. The next type is a vegan mayo that does not use any egg at all. They all taste a little different. They also make a wasabi mayo and a (sweet type) that tastes like Miracle Whip salad dressing. The red topped Japanese variety is best.

    So I been Teppanyaki Chef for a few years.... and in our yum yum sauce we also add lemon juice and sugar. Maybe that’s why you got the bland taste. And we don’t use ketchup. I know there’s a million ways to do it but that’s how we get it done. (Not criticizing)

    Perhaps less water or eliminate and replace with ketchup garlic and maybe a bit more paprika or some smoked paprika.

    The difference between Hellman’s mayonnaise and Dukes. Hellmann’s is made with vinegar Dukes is made with Apple Cider Vinegar.

      Interesting. Have thought about trying to find Dukes. Always used Best Foods (Hellman's), but not sure Dukes is even available on the West Coast.

    Not sure that Dukes is a good Mayo for Yum Yum. Dukes has a very bright flavor so it's great for potato, pasta, Tuna and chick salads. The ketchup is adding a lot of brightness to the Yum Yum so I really don't think you need more. But that just my thoughts.
