I made this recipe exactly as printed and everyone loved them. Like you I put condiments on the side. Sour cream, cilantro, lime wedges, jalapenos, etc. I made a nice salad and we had a banana pudding to go with. It was amazing and I know everyone stayed full for hours, which warms my heart and mission accomplished. Thank you so much for this recipe. I am going to try another one of your recipes tomorrow since I know I can trust them to come out tasting so good.
I've only always made my enchiladas with a chilisauce base and corn tortillas, however, this approach looks awesome and I'm going to give it a try. You taught me something new with your tomatoe sauce base.

This looks great! When I do chicken enchiladas my family doesn’t like it when the tortillas get soft so I make the sauce and put it on after I pull it out of the oven and then I put a bunch of cheese on it and put it in for just like a couple minutes for the cheese to melt it’s really good that way too!

Made this tonight. Perfect amount of heat. The only thing I would do differently next time is I would put cheddar cheese instead of cream cheese. The sauce is delicious.
I made this tonight. I went by the recipe except i xooked only 5. There are only two of us. I put the rest up for another time. I thought it was great!!👍😄
I would put some of the cheese in the roll ups, and let it melt into the chicken mix,then put the left over cheese over the roll ups like you did. I serve with chips and homemade salsa.

Yes, that's what I understand. But I'm a gringa, so I hesitate to try and correct someone. The other oddity is that my suegro (from New Mexico) added other ingredients to the filling, e.g. black olives, cheese, cilantro, white & green onions, and canned Ortega chiles, but I've never seen an authentic enchilada recipe with these added filling ingredients. Are these added filling ingredients frowned upon?
@@UTubeQu1che551 you can put anything you want inside, but the name comes from the sauce base - enCHILada = chile; enTOMATada = tomato. But TexMex, on the other hand, has tomato in pretty much everything. I don't think I've ever seen a TexMex enchilada that didn't also include tomatoes...a matter of taste, but not authentic 🙂

My Family Red Sauce 8 dried guajillo chiles 2 c water 1/2 small onion 1 lg clove of garlic 2 tsp chicken bouillon powder salt to taste Remove stems and seeds from chiles, rinse well. Put chiles and water in pot or sauce pan, bring to a full rolling boil, remove from heat, cover and steep for 20 minute. (Time to make filling!) Put steeped chiles into blender cup. Add enough water to steeping liquid to make 2 cups and add to blender cup along with onion, garlic and chicken bullion powder (I use Knorr). Blend until smooth, taste, add salt if necessary. Pour into a shallow, 10" pan and keep warm until needed. When ready, dip tortilla into sauce, fill and roll enchiladas. Pour remaining sauce over enchiladas, sprinkle with oaxaca and/or cotija cheese and bake @ 350 for 30-35 minutes. Enjoy! 🙂
