I marinated a couple hours or more then fried them up and Yum!! I didn't make the dipping sauce but your recipe makes tasty chops!!

If you use a heavy baking soda brine on them over night. risen it off good. Pat dry, butter them and season. i like a lot of garlic on mine, and sprinkle of cinnamon on mine, and some chicken stock over it. let it rest 1 hour. Then ready for the grill. They will be so tender, juicy and so delicious . Better than any steak charcoal on the grill

Calamansi juice is impossable to get in my reagion at anywhere near a reasonable price, as a sub i use lime juice with some palm sugar for the sweetness. If anyone has a better idea please let us know. The recipe is very good even with the subbing of the calamansi juice and well worth the effort. Take care, God bless one ans all.
It’s OK to poke holes while the meat is raw. You are not releasing any juices. When you cook the meat and start poking holes, then you’re gonna release whatever juices in the meat.
For ya’ll non cooking folk, poking holes or using a fork allows the marinade to permeate the meat have savior flavor. To keep juices intact sear at high heat to create crispy outside and let meat cook if beef at 150-168 F range but pork as chicken insure it is in 168-170F
Pork does not have to be cooked at so high an internal temperature. In the old days trichinosis was a problem with pork that was not cooked well done but it does not exist anymore. I cook my double thick pork chops like veal chops, somewhere in the 135-145 range and they're juicy and delicious. Cooking to a higher internal temp only toughens the meat. I also use a "jacquard" to tenderize the meat. Google it. It's a tool with anywhere from 15-45 small blades that can tenderize any sort of meat in seconds. Most fine restaurants use them on their steaks.
If you don't share your secrets? They die with you, and no one get any good out of them. So i share mine as well. Cause i want every one to taste what i taste

That's a citrus fruit like lemon or lime. Hence, you can use either of those as substitute.
