10:00 a.m. This was a terrific idea and I baked them for my family to have with brunch after Sunday golf. How I did it tonight. Next time I line the sides and bottom with bacon. Or use a tortilla. Or biscuit like some comments suggest. The bacon & sausage make enough fat so the whole thing lifts out easily but it's still not a "finger-food." I had to eat with a spoon. Ingredients: 12 slices bacon, enough to line each muffin pan cup 12 oz cream cheese, room temp. 1 C sour cream 2 poblanos, chopped 1 C onion, chopped 1 C green pepper, chopped 12 oz smoked sausage, like eckrich 1 C shredded cheddar Bbq sauce Chives Black pepper Instructions: Par-cook bacon in pan over medium heat 8-10 minutes. Drain and while hot quickly work into muffin pan cups so they line the cups. Paint bacon with your favorite bbq sauce. Set aside. Chop 12 sausage coins to "top" the muffin cups. Dice rest of sausage and mix in bowl with room temperature cream cheese, sour cream, shredded cheddar, poblanos, onion and green pepper. Add chives and black pepper to taste. Scoop cream cheese mixture into muffin pan bacon rounds and top with sausage coin. Bake at 350° F for 30 minutes.
I love love love her and her recipes! I learned a lot of tasty quick breakfasts for my family and they LOVE them! Of course as with all recipes we can always substitute or tweak them to your liking, so why y'all hating on her? Cause she's a beautiful young lady? That's just jealousy, instead of empowering her with confidence and encouraging her to share more of her great recipes, shame on you! Ehhh’, any kind of dough is an EXTREME inflammatory, low grade ingredient, heavily processed factory food. Insulin resistance and flammation are the driving forces behind basically EVERY modern disease in crumbling western societies. Follow a fat man/woman around the grocery store and watch what they are buying, and over 50% are using taxpayer funded food stamps. She’s made a wonderfully ketogenic meal/snack here, with maybe a couple tweaks mentioned. I’d be interested to know what your BMI is, and what your overall metabolic health looks like.
I would cook the bacon in the pan for 10-15 min and pull it out and then add the other stuff on top. And I would take some shredded hash brown and finely chop the jalapeño and add egg and mix it up and put it on top like a lid and pop it back in the oven and brown them and then remove and eat. That sounds really good, but your way looks yummy too. Just a little to soft it needs to be a little firmer.

Nothing really wrong here, but after trying the initual recipe, we wanted more layers of flavor. We tried this 4 at a time. As dipicted, it falls apart. We then cooked the bacon for 5 minutes before assembling. We cut Grands biscuits into thirds and put in the bottom, sprinkled some Rub on the biscuit, Bacon with the BBQ sauce, cheese, Sausage, cream cheese that we added some minced red onion, cheese, Jalapeño and a dab of the Rub on the top. The biscuit absorbed too much of the grease from the bacon and or sausage. We then tried grilling the sausage to add another flavor dimension and remove the oil. That and lean bacon helped tremendously. We then tried some corn bread in the bottom instead of a biscuit. Jalapeño corn bread would work well here. We also put a little minced Garlic in the Cream Cheese. That seemed to be the crowd favorite.

Yes, I have recently discovered that I get a cleaner, less messy cut on some things, when I use clean kitchen scissors, I thought it was for cutting open food packages, but, after watching this lady, I found out I can cut food also.
When I was a kid I thought it was funny that my Granny used scissors to cut the pizza, then I grew up & found out she knew what she was doing way back then!!! 😊 I love my kitchen scissors & use them for all kind of stuff!

When people do these its clear to see they don't cook much. This doesnt even make good sense. First you want your bacon cooked alone in a pan or chopped up crisp. Pull it from the pan before it gets hard but is fully cooked to temp. You want to add parchment paper to the cake wells or not if you want to clean up more. Lay your bacon around the side. Then you put your binding mixtur4...the cheese stuffs in the wells then place your sausage slices 1/4 inch thick straight down where they on edge in the mixture...2 per cup. Now your bacon will be done and the grease will will not be the main feature from the oversized sausage you used and the cl4anup is easy.
The ingredients look good, however it didn't look like it held together too well upon eating it. I can't stand finger food stuff falling a part while eating it.

Using the pre cooked bacon would work too instead of the raw bacon, less grease too.

The ones she used are called kitchen shears. I've seen them used a lot to cut out the spine of chickens or turkeys to spatchcock them.
I held my breath with every snip, waiting for her to lop off a finger tip or two. Some basic knife skills would help her here.

The ingredients look good, however it didn't look like it held together too well upon eating it. I can't stand finger food stuff falling a part while eating it.
