    Another Gr8 video, I'm surprised by the results of the first attempt. I also would have thought that passing the knives over the same stones would have achieved similar results.

      I need to apologize for taking so long. I've had a surgery on my knee and some other things going on. We've had the court case for my car accident. We had to deal with that as well.     Hi Greg, I experienced comparable results even with different white steel blades. I touched up three blades on a Belgium brick (natural stone). Two blades in white #1 from Tanaka San and one Mazaki in white #2. The touch up worked on the two of the blades but not on one of the white #1 Tanaka. I was able to feal the difference on the stones. The one knife got not that sharp as the other. So I put the last on additional on my Morihei 9000. And wow that fixed the problem. I belief the white #1 blades have different hrc values. And that the reason why they react as they did.

    Different steels will lend better to different stones. Maybe something like a Naniwa diamond stone would've worked better on the sheffcut. White 1 is such a basic steel you can sharpen it with whatever stone you want. Probably even a brick could make white 1 razor sharp

      I'm definitely gonna go back and re-sharpen that and see if I can do better. And I agree with you that sometimes it takes you your whole life using different stones to figure out which ones are better for which steel. I need to apologize for taking so long.     Great content. We don't get to talk to much about how these high hardness steels (above 63) really require a different set of tools. The softer stones just won't work. You'll spend hours and hours and only be left with sore arms and a semi sharp knife. I don't sharpen kitchen knives, I spend my time with outdoor knives and tools and have found that a set of good hard stones and a lower grit rating is going to be your friend with hard steel.

I have learned that I think I like it to be around 61 to 62 to 63 on the hardness scale because I really like getting them really sharp and I get frustrated as well with the hire harder steels

    Great video, very informative, It would be cool to see you do some additional american brands. Stealport knife company in Oregon makes one of my favorite knives and new west knifeworks is also great. Cheers

    Hi Greg. I have noticed on a number of your videos you have stated that you would post links to other videos on the top of the current video, however, I don't think I have seen any links so far. Either something is wrong at my end or there aren't any links and maybe something has gone wrong at your end. For this video for instance, can you confirm that you have indeed added a link to another video? Love watching your videos BTW.

      The links are usually overhead when I say it. Sometimes they pop up a second later, but they're normally in the upper right hand corner of the video. I don't always put them in the description.     Hi Greg, White #1 is well balanced and not very brittle! Deren on the maker - but steel with large carbides is more probe to chipping!

      I think you've been very fortunate. I do believe that the harder knives are more brittle, but I do consider white number one to be the more brittle of the Hitachi steel.

    Greg. So. Question. Talked with Rowland. Thinking of getting an identical ktip gyuto. Thing is which carbon steel should I go with. This will be my 1st traditional “Japanese” kitchen knife. And no idea on stones. Which carbon steel and which stones. Money isn’t an issue. I’ll get stones over synthetic if they’re the best. Was at one time thinking of getting a honyaki blue #2 bunka or kititsuke. 🤷🏻‍♂️

    Hi Greg, I've heard you say you're a hair dresser. Do you use straight razors? Could you show us mere mortals how to sharpen, hone & strop one correctly please🙏

      Thank you. I use straight razors with disposable blades. It's a hygiene thing and I would have to sharpen the blade constantly while at work and I'm too busy. I see as many of 17 people a day. I do want to learn for the sake of teaching you, but there are other channels currently out there that can help you. I would like to learn and then share that information with you.     This is exactly why I am not a fan of super wear resistant steels in kitchen cutlery. You want the knife to be extremely sharp, and you want to be able to get there without the extra hassle that wear resistant steels can bring to the sharpening session. I don't consider Sheffcut to be very wear resistant, because it simply isn't. This is more of a stone issue. I'm not sure exactly what stones are being used here, but I prefer ceramic man made stones like Shapton pro or glass. They'll make quick work of most steels out there. Besides the simple carbon steels, AEBL and CPM154 are my recommendations for kitchen cutlery, especially if maintenance is a concern for the client, not having to worry about patina and corrosion. I do not recommend steels that are more wear resistant than CPM154 for kitchen cutlery. The fact is most people just don't have ceramic or diamond stones, if they have ANY stones at all. They want a very sharp knife that can be easily maintained, both as far as cleaning and easily sharpened. AEBL really is the best of both worlds, I call it the "stainless steel for people who like carbon steel". Even the latest craze Magnacut. Great steel, very stainless, very tough for a stainless, pretty good wear resistance. But if you think Sheffcut is more difficult to sharpen over White steel, try Magnacut on those same stones! Also, wear resistance isn't super useful in kitchen cutlery. You want strength (hardness), and steel tough enough not to chip out. Also, "White steel, the best steel in the world?" Sounds like someone has been listening to Murray Carter! Good video, as always!

      If you watch the video, then you saw that we used a variety of stones and all of them were synthetic. We did some finishing maybe on Japanese. I can't remember now it's been a minute. But all of the edges are placed with synthetic. A variety of ceramic and other materials. I like to mix it up. I sharpened two knives on the same stones, and the one knife got extremely sharp and easily got sharp versus this type of steel on the exact same stones. I'm not being a smart ass when I say the next statement, tone does not come across when you're writing text, but if you would go back and watch the video, you'll see that we sharpened two knives on the show. I'll give you some clips of the other one. The one knife got extremely sharp and very easily got sharp, using the same exact stones. I have gotten a Knives down to a 15 on the BESS tester. I have been able to do the tomato test on blueberries. I have been able to place a paper towel over a knife and blow on the paper towel and sever the paper towel while it's just over the blade. So I can get a knife very sharp and this just did not get very sharp. It got sharp by everyone else's standards by mine. I like someone hundred. I need to apologize for taking so long.
