rdr2's physics is more realistic as you don't usually flop around like jello when you fall down but rather try to take no damage by keeping your body still and rolling.

I think GTAIV is more realistic at the water physics against the explosives because in GTA4 you use a frag grenade, in RDR2 dynamite. If you throw a frag grenade in water it can still explode as its sealed, but the fire on the fuse should be supposed to get distinguished by the water, as a result it shouldn't explode
It didn't distinguish because Rockstar wanted to show us the water physics of the game. We would never see the water physics if dynamite distinguishes.
gta4's physics were a bit exaggerated is some cases and the controls were a bit janky as for the jumping from a moving vehicle you need to factor in the different speeds of travel and smoothness of the terrains
