The skin is good dietary fibre.
I’m too lazy to peel it so i’d simply eat it whole w/ skin and all. Japanese sweet potatoes skin is soft anyway.

I'm told the Japanese sweet potatoes are now available to get in the United States, no matter what grocery stores don't seem to carry them. I'll try to check for some of the fancier international market since I really want to try this.
