Probably just the lighting to be honest. You can definitely see the steam at 01:30 when it's mixed together. You can see wisps of steam throughout the video too though.
Thank you! It depends, but I usually buy from a butcher and sometimes farmer's markets for videos. For my usual meals, I just buy from Costco because it's a lot more budget-friendly.

Would have to do turkey or pork. But looks yummy.
I could see pork working really well, too. Turkey is quite lean so you'd need to adjust the fat content elsewhere as needed.
