Welcome to Brazilian Kitchen! Today, a dish that is a dispute between two states: Moqueca!
And we're going to start with the version from Bahia. To cook this you're going to need:
-2 pounds (1 kg) of white fish (cod fish, sea bass, Mahi Mahi, dogfish, etc)
-4 tablespoons of red palm oil (dendê)
-13.56 fl oz (400 ml) of coconut milk
-1 red bell pepper
-1 green bell pepper
-1 large onion
-handful of cilantro
-handful of garlic
-4 tomatoes
-1 lime

Love it! The fact that you chose to make the Bahia version, as opposed to the other one, speaks for itself and says it all. LOL! I've never seen anyone add chillies to their moqueca. Usually folks in Bahia serve the "molho de pimenta" on the side for those who like it hot. It allows kids to eat the moqueca without concerns and adults have control over the amount of heat they add to it also.

Great recipe, Pedro! When I was in Salvador da Bahia I could smell dendê oil a lot, and I loved it - it’s amazing in moqueca. This is the first recipe I’ve seen where marinading the oil in citrus is recommended. I will try this. For how long did you cook down the red and green capsicums (bell peppers)? I will try this recipe, and I will research the version from Espírito Santo, too.
Hey, thanks for the comment. I'm glad you had the opportunity to visit Brazil. Actually, I didn't cook the bell peppers, I just laid it in the pan and added the fish and the coconut milk.

Hi Bina, the red palm oil is what gives it the characteristic flavor of the moqueca, but I'm sure it will turn out very good as well!
You can also get the dende from Amazon if you can't find it locally! Let us know how it turns out!
