Sorry that I'm late to the party, been busy with project, mates... Kyoto is the cultural city of Japan, and yes, pretty chill and quiet but can get a little touristy in certain areas. Love the little cafe, very homely, old school and simple food as well. When we were in Japan the last time. a lot of the small little cafe serves pretty amazing and delicious food , to my surprised. High quality stuff as well. Actually, the train passing by in Kyoto was part of the higlight of the trip. hahaha! The Japanese really love their trains..... Miss those japanese vibes.
In North America most Japanese restaurants are owned by Koreans and usually there are some Korean dishes on the menu. The sushi chefs have usually been trained in Japan.
Not sure if you have already visited Tokyo, but there is ramen shop there owned by a disabled chef in a wheelchair. He works at least 18 hours a day. He was interviewed by the channel ASIAN BOSS. I recommend you check it out. His restaurant is on my bucket list.
