thanks for the tips - my teenager is working at a very busy brunch place as a runner and the chef says he has to carry three plates because the window backs up. He used to work at a pub w/rectangular plates that he could easily carry in threes, but has been afraid to try carrying three at the brunch restaurant. This video really helped w/carrying round plates. "Three fingers down, two up." 👍👍
X , this fear of yours will most probably materialize as soon as you start working! We have all spilled drinks on guests! Nothing to worry about! Apologize and move on! With time you will learn not to do it! Good luck!

If it ever helps anyone. While you're still new and getting used to carrying the trays I would take my risk when I was bringing plates back to the kitchen to be washed. Just absolutely stacking my tray with plates and cups so that I could practice the weight and how I handled the tray without risking spilling all over customers. Worst thing might be when something hits the floor but it allowed for me to get stronger and more confident with heavily loaded/off balance trays. Of course know your limits, dont stack the tray in such a way that things are guaranteed to fall but yee

Thank you so much, Waiter Academy. I truly appreciate the advice and the encouragement. This has helped me immensely and the intro to your video made me feel good about what I was doing. Keep up the great work!
Love your videos man! The way you hold the plate at 2:19 I like to hold a tray like that, that is big enough for 2 plates to sit on, then have one rest on my thumb and pinkie and one in my other hand
THanks MB, I hope I help! Check the free online waiter training course at the Waiters Academy website and the Waiters Network as well for more help! Good luck!
Thanks Caleb. I have never worked in a sushi restaurant and right now I can't even remember what a sushi plate looks like! Anyway, I cannot teach you something I have never done!
Love this video @ 2:20 you see he holds the plate upright with his pinky @ 2:56 you can see he holds the bottom plate with 2 fingers in the ring, the middle finger holds the weight of both plates, and the pointer is holds the top (it is important to see he doesn’t pinch his fingers between the plates.) @ 4:24 you can see that he isn’t using his knuckle to hold the third plate which is a mistake that people often make. But if you’re working for 8+ hours you cannot balance a third plate on your knuckle you’ll destroy your hands that way. The third plate is balanced in a triangular shape with your forearm, finger, and bottom plate.
@7:28 you can see that even subconsciously he grabs the heaviest part of the plate. Meaning he grabs where the meat is closest to his grip, not the potato side where the plate is light. You want the weight closest to your body/grip. He even has the top plate where the heaviest part is closest to him and the light weight is towards his fingers. @8:15 he separates the weight of the food so not all the heavy weight is at his grub in order to balance it so the weight is even and the plates become flat. @8:28 you see his elbow is 90 degree angle. Never stretch your arm out. You will always be able to hold more weight at a 90 degree angle, if you keep your arm straight down and pushing into your body you can hold heavy weight. Focus on bringing your wrist up and not your entire arm. @ 10:40 he shows you arms are no long straight but close to the body and bringing the wrist in. Careful not to tilt your wrist in too much because you can get hurt running that weight with your wrist overly extended inward. So if the plates have sauce carry 3. If they don’t have sauce carry 4 when you’re comfortable. But you should always be carrying 3 plates unless you are carrying 2 heavy bowls. * Or if you carry a sauce plate on top and a heavy bowl on bottom you might drop the bowl. Because it’s too heavy & you’re trying to balance the top plate so the sauce doesn’t spill, it can be tough at first but it’s doable. Focus on 3 plates and you’ll be fine. If it’s two heavy bowls, run the bowl, then come back for the plate or maybe they have the large treys that you put over your shoulder. Stretching your wrist is important if you work at a place where you use those huge oval treys. Because you can snap your wrist back. You can practice holding some sort of heavy box that way to build forearm strength. Best suggestion is lifting weights and instead of just doing curls, you lift the weight up, and then twist your wrist so your knuckle faced up towards your nose. That will build your forearm muscle immensely fast. Goodluck everyone!
Im so lucky because i learn how to carry those plate thanks god . Keep practicing for those who have passionate in food service . One day all those things is ur everyday routine without any tension 😉

I will go back to working a bit as a waiter/barista after a long break due to COVID-19 lockdowns. I was just seeing that I have to carry four plates, and when I went to my kitchen and picked them up, I realized just how not doing it so long can make your mind go blank. That, and I had square plates ! LOL
Second video I've watched from you. Absolutely love it! Everything I learned many years ago I see you doing, and your videos are refreshing my knowledge. Thanks so much for these! :)
It is a good idea, Shani! I am going to do it! Unfortunately it is taking a while but thanks for the idea! I will explain a bit more for you when I have more time!
A little while ago I was super nervous about taking an interview. I watched several of your videos which helped me a lot. Thank you very much for all the content. I Got it ! I'm coming USA when this corona virus passes . THANK YOU SO MUCH!!!!
The Waiter's Academy Ohh thank you so much. I specialised in two aspects under hotel management, that is kitchen(cookery) and service. its really wonderful to follow people like you(waiter's academy)
Had a Female server who was a pro when it came to carrying foods . Same methods. 2 on each arm. The third plate she would carry on her right hand. Assuming she worked in the restaurant business for a long time. Yes. Placing the plates on the arm is tricky. When i was a busser. I would collect dirty plates from customers. If 4 people were dining. I would collect all four plates. If more than that. Than collect what i can grab head back to the kitchen to unload. And continue with another table. And so on.
Very good point, hbicsince93, you cannot! In Europe this is not a problem because the food is served from the right with right hand. But any establishment where the etiquette is fallowed strictly you will not be allowed to carry plates with hands or more than two plates so you won't have this dilemma!
Great question Matthew! Yes it is ok! YOu either tell the guest : 1. Sir/Madam may I take your plate? - Extending your hand toward it and the guests will figure it out on himself he should help you and hand it to you 2. Sir/Madam would you be so kind to pass me your plate if you are through with it? and do the same thing with your hand! Thanks for the question and good luck!
Sir please make video how to serve different different foods. Like noodles how to serve gravy noodles....it's difficult to me when I serve the noodles to guest....
HI Farooque, thans for the suggestion! I do'nt know what is the case in your restaurant and how do you serve the noodles! Every restaurant has a different practice of serving but you should have some one there who can teach you and explain to you what to do and how to do it! I work in Italian restaurants for many years and we always serve the noodles in a plate for the guests. This should not be a problem
Why do you serve food on the right side but when you come to put food on the plate you do it from left side? And btw great tutorial, with one suggestion..ask someone to help you out with the camera because UX would be better at the situation where you explaine turning your wrist while you are putting 3rd plate..anyway greetings form Croatia!!
Thanks for the suggestions Damjan! You serve food from a food tray from the left with the right hand because this is the shortest distance the hand have to carry food from the tray to the plate! Why they serve plated food from the right with the right hand, to be honest i have no idea! For me the american way : serving with left hand from the left makes much more sense! But I have not made those rules! They are set in stone for hundreds if not thousands of years and it is what it is! I am just showing how it is done properly! Greetings back to beautiful Croatia!
I wanted to give up on my first day of just barely learning because it all seemed so overwhelming but I just stuck in there and it's only my 3rd day but I'm learning so much and it gets easier the more confident you get. If you're a trooper like I am, just keep on putting one foot in front of the other
I am going to take a new job as a waiter without an experience. Do you guys think I can do it and so should go for it? My only experience is these videos.
It is a good point, LavenderOcean, but in our business everything comes the way the guests wants it and trust me, I have tons of guests that eat soup as a main course!
Good question! It takes time, experience, and learning to be able to read the table properly! Give yourself time! There is no one simple answer to this question.

Had a physical calss of that at school but with water on the plates... except I forgot how to do the right moves so it would not spill. Thanks!

Love your videos man! The way you hold the plate at 2:19 I like to hold a tray like that, that is big enough for 2 plates to sit on, then have one rest on my thumb and pinkie and one in my other hand
I m really happy to watch ur videos bcs it helps me to improve my career
Thanks for sharing that with me Sijo! I wish you a great career in our Industry!

This helped me out so much. Can you do one for sushi plates and other different types of plates?
Thanks Caleb. I have never worked in a sushi restaurant and right now I can't even remember what a sushi plate looks like! Anyway, I cannot teach you something I have never done!
Love this video
@ 2:20 you see he holds the plate upright with his pinky
@ 2:56 you can see he holds the bottom plate with 2 fingers in the ring, the middle finger holds the weight of both plates, and the pointer is holds the top (it is important to see he doesn’t pinch his fingers between the plates.)
@ 4:24 you can see that he isn’t using his knuckle to hold the third plate which is a mistake that people often make.
WOW! Thanks Josh, you have really taken the time to dissect the video! Very helpful! Thanks a lot!

I will go back to working a bit as a waiter/barista after a long break due to COVID-19 lockdowns. I was just seeing that I have to carry four plates, and when I went to my kitchen and picked them up, I realized just how not doing it so long can make your mind go blank. That, and I had square plates ! LOL
hehe, Tyson, you will be alright! Good luck!
Very nice... thanks for the knowledge
Welcome Atjiheuandje! Good luck with the job!

hope to see you mentor in Uganda.
Definitely very informative. Keep the videos coming. Thank you for your contributions
Thanks James! I will try to keep working on it!
And so on.
So it is! Girls or guys if you want to make it in our business you have to be tough!
If your hands are full with those 4 plates how can you serve from the left if you have that one plate in your right hand?
Very good point, hbicsince93, you cannot! In Europe this is not a problem because the food is served from the right with right hand. But any establishment where the etiquette is fallowed strictly you will not be allowed to carry plates with hands or more than two plates so you won't have this dilemma!
Thanks for your helpful
Welcome Samir! I hope you are going to do great!
This helped a lot thank you!
You are welcome Hana Mae! Good luck!
How do you pick up a plate on the table too far from your reach? Is it right to ask a guest to help pass it to you at that circumstances?
Great question Matthew! Yes it is ok! YOu either tell the guest :
1. Sir/Madam may I take your plate? - Extending your hand toward it and the guests will figure it out on himself he should help you and hand it to you
2. Sir/Madam would you be so kind to pass me your plate if you are through with it? and do the same thing with your hand!
Thanks for the question and good luck!
Yes thank you so much for making these videos!!!!
You are so welcome, Love :)
Thank you for sharing ur knowledge sir...
YOu are welcome Flora!
Thank you for taking the time to make this videos. I appreciate it. I have learned so much from all of your videos.
Here is how you can learn even more:

Greetings back to beautiful Croatia!
can you plz make the same tutorial but with square plates?
Tomas, I could but it won't be much different! Square plates are more difficult to handle but the technique is the same!
I lied about having waitressing experience to get into a place.
And now I’m here
OMG I GOT IN- I’m actually fucked
lmao
Good girl 😅 Kekeke! Now all you have to do is to give them your best and just keep going! Best of luck!
Lolll how is it going?
I wanted to give up on my first day of just barely learning because it all seemed so overwhelming but I just stuck in there and it's only my 3rd day but I'm learning so much and it gets easier the more confident you get. If you're a trooper like I am, just keep on putting one foot in front of the other
Thanks you sir you are a big pro..
Thanks Yonka! I appreciate that

I am going to take a new job as a waiter without an experience. Do you guys think I can do it and so should go for it? My only experience is these videos.
You can do it man
Be confident👌😎
Soups always come out first before the meal. They are not served at the same time with the entree. This only works if the soup is an entree
It is a good point, LavenderOcean, but in our business everything comes the way the guests wants it and trust me, I have tons of guests that eat soup as a main course!
Excuse me sir . May i ask you ?. About how to recognize the customers character ?
Good question! It takes time, experience, and learning to be able to read the table properly! Give yourself time! There is no one simple answer to this question.
