    I recently watched a video on canning cuties. She separated all of the sections, then placed them in a plastic container with water and something called pectin enzyme. It’s available on Amazon. After two days in the fridge, the pith is gone, and she proceeded to water bath can them. Pectin enzyme is commonly used in the wine industry. The end product looks just like the mandarin oranges from the grocery store, and her children love them. I’m going to try doing this with grapefruit sections. Thanks for your video, I also own a Cary/Nesco. Depending on the jar style, I find that it will hold 6 pints of regular mouth jars. For 6 or more pints, I use my steam canner these days. 😊

      Thanks for sharing, Wendy! I'll have to check out the pectin enzyme! We've been happy with how these turn out, but especially if you get oranges that are a bit harder to peel, then it definitely seems like a good idea to try the method you mentioned. I've seen other people use a paring knife to remove the pith, and man, that seems like it would take forever! Where I live there are a ton of citrus trees all over the place, so I can get a lot of different types of oranges for free (not Cuties, lol!). So I might want to try it for sure on those that don't peel as easily.
      I haven't yet tried steam canning, mainly because I don't want to have another appliance to store. But it seems everyone I know that has one loves it!

      @@StockingMyPantryMy steam canner isn’t the type with the big lid. It’s a stockpot, with a rack you can flip over to use for water bath or steam canning. So I could throw away my old speckled pot that had developed leaks.

    Hello… I love your explanation. I’ve never used my Nesco for water canning. Something new to try.
    I wonder if sugar can be substituted with Splenda or Stevia? Thank you and cheers. 🍷

      First, thanks for watching and for your kind words. That's a great question, and one I didn't know the answer to, so I looked on the National Center for Home Food Preservation website and here's what I found: nchfp.uga.edu/faqs/general-food-preservation/category/faq-general-food-preservation#gsc.tab=0. It looks like it will be fine to use Splenda. I couldn't find anything on Stevia.

    Hello I am a new subscriber. Have you tried this recipe for lemons or limes? Costco has such a great price on organic citrus but the bags are large. Currently, I juice and freeze the extra, but canning them sounds great for winter when the price gets so high for citrus. I think using lemons and limes in the sugar for hot tea sounds amazing! Also, I will try to blend and strain the fruit/syrup and use as a bar mixer (keep refrigerated) for lemon drops or margarita mix.

      First, thanks for subscribing, Colette! I haven't actually tried canning lemons. I have dehydrated them, and also preserved them in salt. There are directions for preserving them in salt in this book: amzn.to/44PJY1z. From the same book, there are directionfs for doing something similar with limes. I also canned spiced honey that had lemons in it, again, from that same book. (This is a popular Ball canning book, and it has a lot of great info, so you can't go wrong with it.)
      When it comes to just canning lemons straight, another commenter mentioned she watched a video where someone canned Cuties, and she placed the peeled Cuties in a container with pectin enzyme. I have never used that before, but apparently, it removes the pith, That may be helpful with lemons, because they are harder to peel and get rid of all of the pith compared to Cuties.

      @@StockingMyPantry Thank you, just ordered the book! It is coming tomorrow with a Nesco electric canner. I have been canning for 20 years. Due to a car accident, I can't lift the regular canning pot. We are so excited about this small canner. Very grateful!

      So sorry to hear about your car accident, but glad to hear you are getting this book and canner tomorrow. I think you'll love it! This canner is a bit heavy, but not compared to a stovetop canner full of water. If you struggle with it at all, after canning, and after removing the jars, you can lift out the inner pot and dump the water, so you don't have to lift the canner + the water at the same time.
      I think the small batch canning will be perfect for you. I have a lot of pain issue, and find if I do too much of anything at a time, I end up in pain. Because of that, I can't handle marathon canning sessons, so the small batches that fit in the Nesco are perfect for me because I don't spend too much time on prep.
